This particular breakfast bake is a great way to use up leftover ham! Whether you’re coming off of an Easter dinner, a Christmas celebration, or have some freezer ham that you need to use up, this is a great solution. Think of it as a savory bread pudding.
There are a few ways to change up this easy recipe to meet the needs of various dietary restrictions. If you have a gluten free household, swap the white bread out for gluten free bread to make this a keto breakfast casserole.
If you are dairy free, swap out the mozzarella cheese for dairy free cheese. Just make sure that the variety you choose will melt nicely so that you get a similar texture to the original.

Cheesy Ham Breakfast Casserole Ingredients:
2 cups cooked ham, cubed
2 cups mozzarella cheese, shredded
1/4 cup green onions, chopped
8 oz bread, cubed
4 eggs, beaten
1 tsp garlic powder
1 tsp Italian seasoning
pepper (to taste)
sour cream (optional)

8×8 baking dish

Directions:
Step 1: Preheat your oven to 350 degrees and prepare an 8×8 baking dish with nonstick cooking spray.
Step 2: In a medium-sized bowl, combine the eggs, garlic powder, Italian seasoning, and pepper. Mix everything well to incorporate.
Step 3: In a separate large bowl, combine the bread pieces, diced ham, cheese, and chopped green onion, and stir them together. Pour the egg mixture into the bread and ham bowl.
Step 4: Using a spatula, continue to fold and turn the ingredients together until all of the egg has been absorbed by the bread cubes and other ingredients.
Step 5: Transfer the mixture into your casserole dish. Bake for 25 to 30 minutes or until the cheese is melted and the center of the pan is set. Slice it into individual portions and serve immediately.
Place a small dollop of sour cream on top of each piece if you choose and enjoy!

You need about 8 oz of bread to make this full recipe, so as long as it’s bread that you enjoy, the amount is much more important than the variety.

Does French bread work best?
You can use any bread you have available! I usually use whatever sliced bread I have, but you can use whatever you have handy. 🙂
have you ever prepped this dish in advance? Just wondering if that would be an option.
I haven’t prepped it in advance, sorry! The only concern I would have is that the bread could get a bit too soggy while being refrigerated, but it could perk up during the baking process. Or you could use a bit more bread so that the egg mixture is a little thinner. I think it could work!
