Who doesn’t love an easy breakfast casserole recipe? Whether you’re making this as a holiday breakfast recipe or just want a new recipe that will serve the entire family, this makes for a delicious morning dish that the whole family will love. Even the picky eaters won’t complain!

This particular breakfast bake is a great way to use up leftover ham! Whether you’re coming off of an Easter dinner, a Christmas celebration, or have some freezer ham that you need to use up, this is a great solution. Think of it as a savory bread pudding. 

There are a few ways to change up this easy recipe to meet the needs of various dietary restrictions. If you have a gluten free household, swap the white bread out for gluten free bread to make this a keto breakfast casserole.

If you are dairy free, swap out the mozzarella cheese for dairy free cheese. Just make sure that the variety you choose will melt nicely so that you get a similar texture to the original. 

This is a great dish for Christmas morning or Christmas brunch, as one of your Mother’s Day brunch recipes, or a Sunday morning when you want a delicious breakfast! A perfect way to use up those leftovers!

Recipe Notes:

  • The raw eggs may not completely soak into each piece of bread, but coat them as best you can before baking. 
  • You can replace the mozzarella cheese with sharp cheddar cheese if that’s the family favorite.

How To Make:

Cheesy Ham Breakfast Casserole Ingredients:

2 cups cooked ham, cubed
2 cups mozzarella cheese, shredded
1/4 cup green onions, chopped
8 oz bread, cubed
4 eggs, beaten
1 tsp garlic powder
1 tsp Italian seasoning
pepper (to taste)
sour cream (optional)

Supplies Needed:

8×8 baking dish
Medium bowl
Large bowl
Whisk
Spatula

Directions:

Step 1: Preheat your oven to 350 degrees and prepare an 8×8 baking dish with nonstick cooking spray.

Bake for 25 to 30 minutes or until the cheese is melted and the center of the pan is set. Slice it into individual portions and serve immediately.

Place a small dollop of sour cream on top of each piece if you choose and enjoy!

How To Store Leftover Cheesy Ham Breakfast Casserole

Store any leftovers in the casserole dish covered tightly in plastic wrap or in an airtight container in the refrigerator for 3-4 days. You could also divide it into portions so that everyone can heat up a quick breakfast the next morning.

What Kind Of Ham Should I Use In This Egg Casserole Recipe?

You can use any ham that you have on hand for this tasty cheese casserole recipe. Whether you have deli meat, a ham steak, or a baked ham leftover from a special occasion, if you have two cups of any savory ham, you are good to go. 

Can I Freeze My Leftover Ham?

Yes! After you have cooked your delicious ham, whether it is leftover holiday ham or one that you got on sale, the best way is to wrap it tightly in plastic wrap and place it in a resealable freezer bag or several layers of aluminum foil. For the best results, use it within 6 months of freezing.

What Kind Of Bread Should I Use For This Hearty Breakfast?

I have used a different type of bread almost every time I’ve made this dish. I’ve used French bread, leftover bread (where you just have a few ends from a couple of different loaves), and even stale bread that had just past its prime. 

You need about 8 oz of bread to make this full recipe, so as long as it’s bread that you enjoy, the amount is much more important than the variety. 

What Can I Serve With This Breakfast Dish?

There are a ton of options when it comes to what you can serve with this hearty casserole. A side of fresh fruit, some sliced bell pepper, hash browns or even cooking up some frozen tater tots.

Ingredients

  • 2 cups ham, cubed
  • 2 cups mozzarella cheese, shredded
  • 1/4 cup green onion, chopped
  • 8 oz bread, cubed
  • 4 eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • pepper (to taste)
  • Sour cream (optional)

Instructions

  1. Preheat the oven to 350 degrees and prep an 8x8 pan with non-stick cooking spray.
  2. In a medium-sized bowl, combine the eggs, garlic, seasoning and pepper. Mix well.
  3. In separate large bowl, combine the bread, ham, cheese, and green onion and mix.
  4. Stir the egg mixture into the bread and ham mixture.
  5. Using a spatula, continue to fold and turn the ingredients together until all of the egg has been absorbed by the bread and other ingredients.
  6. Pour the mixture into your 8x8 pan.
  7. Bake for approximately 25 – 30 minutes or until the cheese is melted and the center of the pan is just set.
  8. Slice into squares and place a dollop of sour cream on each if you should choose. Enjoy!

    1. You can use any bread you have available! I usually use whatever sliced bread I have, but you can use whatever you have handy. 🙂

    1. I haven’t prepped it in advance, sorry! The only concern I would have is that the bread could get a bit too soggy while being refrigerated, but it could perk up during the baking process. Or you could use a bit more bread so that the egg mixture is a little thinner. I think it could work!
