Crockpot Chicken Alfredo
Some of my favorite chicken recipes are those that you can begin cooking earlier in the day, throw into the crockpot, come home to finish up, and serve for dinner. That’s exactly what you can do with this chicken alfredo recipe!
A hearty dinner with pasta, chicken, and sauce, you can make a vegetable side dish (like my Crispy Asparagus Fries or Candied Carrots), and be ready to eat. Even better, the kids love it!
The perfect comfort food for busy moms and families alike, you’re going to love the rich, creamy texture of this meal. Plus, who doesn’t love that layer of deliciously gooey cheese on top?
There are two steps to this dinner dish, so be sure to allow yourself an extra 45 minutes to add the additional ingredients before you plan to serve. Once the time has passed, you’re ready to eat! Add this one to your rotation because it is one that the entire family will love!
Chicken Alfredo Recipe
Ingredients:
1 lb chicken breasts
1/3 cup chicken broth
1 jar alfredo sauce (about 15 oz)
1 cup parmesan cheese, grated
2 cups cheese tortellini (generous cups!)
salt and pepper as desired
Parsley garnish (optional)
Take out a cutting board and knife. Pull out your chicken breasts (making sure that they are at refrigerator temperature – not frozen!) and cut them into bite-sized pieces.
Using a 4- or 4.5-inch slow cooker, add your chicken pieces to the bottom. Pour in your broth. Add a little salt and pepper to taste and stir a bit.
Cook on low for 4 – 5 hours or on high for 2 – 3 hours.
About ten minutes before your crockpot timer finishes up, cook the tortellini. Make sure that you do not cook the pasta for the full amount of time recommended on the container. You’ll want to slightly undercook the pasta so that it finishes cooking in the slow cooker.
For example, if the instructions say to cook the tortellini for 8 minutes, you’ll want to cook them for 5 or 6.
Once the pasta is ready and the slow cooker has reached 4-5 hours on low or 2-3 hours on high, add the alfredo sauce and pasta to the chicken.
Top everything with the parmesan cheese.
Cover the slow cooker and cook on high for approximately 30 – 45 minutes. During this time, you’ll be combining flavors, letting the pasta finish cooking, and allowing the cheese to melt.
Serve and enjoy!
