Honey Cinnamon Sweet Potatoes

When I’m looking for a healthy side dish to put on the dinner table, I often turn to sweet potatoes. I have a very picky eater in my house and because this Cinnamon And Honey Glazed Sweet Potatoes recipe tastes like candy (in a healthy way), it is one of my family’s favorite sweet potato recipes. 

A great source of vitamin C, beta carotene, and potassium, these Honey Glazed Sweet Potatoes are one of the easy recipes that you can make whenever sweet potatoes are on sale. They encourage healthy eating and have the best flavor, so they will be a big hit in your household. 

Always vegetarian, paleo, egg-free, dairy-free, and gluten-free, some would also consider it vegan. It does contain honey, so depending on whether your vegan diet includes honey or not, that’s your decision to make. 

This recipe is the perfect side dish just as it is, but you can add other ingredients if you should choose. If it’s Thanksgiving dinner and you don’t have cranberries on the holiday table, add some dried cranberries to this dish so that they’re represented. Next time, try it with some pine nuts for some extra crunch.

Recipe Notes:

  • Use 1 or 2 tablespoons of honey based on your personal preference compared with the natural sweetness of the cubes of sweet potato. 
  • The cook time on frozen sweet potatoes will be longer than the cook time for fresh, so keep that in mind while you are baking them.
  • Consider sprinkling these with a little parmesan cheese to make these slightly more savory sweet potatoes. 
  • These Honey Roasted Sweet Potatoes are excellent served hot, but they’re also great at room temperature.

How To Make Cinnamon Honey Glazed Sweet Potatoes

Cinnamon Honey Glazed Sweet Potatoes Ingredients:

2 cups sweet potatoes, diced
1-2 tablespoons regular or raw honey 
1 teaspoon melted coconut oil
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Walnuts, pecans, pine nuts, or dried cranberries (optional additions)

Supplies Needed:

Rimmed sheet pan
Parchment paper or nonstick spray
Sharp knife or vegetable peeler
Large mixing bowl
Kitchen spoon or wooden spoon

Directions:

Step 1: Preheat your oven to 375 degrees and coat a rimmed baking sheet with nonstick cooking spray or line it with parchment paper for easy cleanup. 

Step 2: Wash your large sweet potatoes thoroughly in cold water.

Peel them and then dice them into small, bite-sized pieces (or if you’re in a hurry you can grab a bag of prepared cubed sweet potatoes in the frozen vegetable section of your grocery store). You’re looking for the sweet potato chunks to be about 1-inch cubes.

You can also mix in pecans, pine nuts, walnuts, or dried cranberries at this point should you choose.

Step 5: Bake for 25-30 minutes until the sweet potato pieces are fork tender and the edges are golden brown.

How To Store Leftover Cinnamon Honey Glazed Sweet Potatoes

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Can I Use Olive Oil Instead Of Coconut Oil In This Sweet Potato Recipe? 

Yes! Because you are only using a teaspoon of coconut oil, you can absolutely swap that out for a teaspoon of olive oil or even avocado oil.

I like to use coconut oil along with the other simple ingredients because it has a higher fat content and pairs well with sweet potatoes, but you don’t have to.  

What Can I Serve With These Roasted Sweet Potato Cubes?

While this easy recipe is perfect for the Thanksgiving holiday, these perfect roasted sweet potatoes shouldn’t just be reserved for one day!

Just like you would serve regular potatoes or sweet potato fries at a weeknight dinner, this simple side will tempt taste buds and pair with things in a lot of different ways. 

As far as main dishes go, these easy roasted sweet potatoes pair well with Bacon Wrapped Pork Chops, Asparagus Stuffed Chicken with Provolone, and Chicken Pot Pie Crescent Roll Buns

You can also serve these tasty small cubes with vegetables that are on sale at your grocery stores. Think simple brussel sprouts, broccoli florets, or even seasoned black beans.

Ingredients

  • 2 cups sweet potatoes, diced
  • 1-2 Tbsp honey (based on personal preference)
  • 1 tsp melted coconut oil
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • Nonstick cooking spray
  • Walnuts, pecans, pine nuts, or dried cranberries (optional additions)

Instructions

  1. Preheat your oven to 375 degrees and coat a baking sheet with nonstick cooking spray.
  2. Wash, peel, and dice your sweet potatoes into small, bite sized pieces (or if you're in a hurry you can grab a bag of prepared cubed sweet potatoes in the frozen vegetable section of your grocery store.)
