Gluten Free Chicken Broccoli Casserole
When it comes to feeding my family, I am always looking for a delicious dinner that I can make quickly without too many ingredients. Even better, if I can hide some additional vegetables in the mix, I don’t have to have a discussion about making sure there is something green on each plate! This is where my Gluten Free Chicken Broccoli Casserole comes in.
With riced cauliflower, the bottom layer of this casserole recipe is vegetables! Add in the broccoli and you’ve got a nice, healthy serving of vegetables for all. Let all of the cheese on top distract the little ones and hopefully this will become one of your go-to dinners.
Whether you typically eat gluten free or not, this casserole is easy and tastes delicious. Don’t let the gluten free part scare you! Pair it with a Fruit Pizza for dessert and you’ve got a full meal that you can feel good about!

Gluten Free Casserole Recipe
Ingredients:
1 1/2 lbs chicken breast
2 cups broccoli pieces, frozen
1 cup riced cauliflower (I used Green Giant frozen 12 oz)
1/2 cup chicken broth
2 cups cheddar cheese, shredded
Salt and pepper to taste
Preheat your oven to 350 degrees and take out a large round baking dish or an 11.9 x 7.7 rectangular dish.
Cook the chicken in your preferred method. My preference is to sear them in a pan on the stove (like below – or skip past that part and begin preparing the cauliflower).
Pour a tablespoon or so of olive oil into the pan. Season the chicken breasts with some salt and pepper, and cook for 10-12 minutes, turning them over halfway through.
Make sure that your chicken breasts are fully cooked through and then remove them from the stove and set them aside to cool. Once your chicken breasts are well cooled, chop or shred them into chunks.
Pour the (still frozen) riced cauliflower into the bottom of your baking dish.
Top the frozen cauliflower with a layer of frozen broccoli. Make sure that it is spread out evenly.
Top the frozen vegetables with the chopped or shredded chicken. Make sure that it is also spread out evenly.
Pour the chicken broth over the mixture in the baking pan, making sure to pour it over as much of the chicken as possible.
Top your chicken with shredded cheddar cheese and bake for 35 minutes.
Serve hot and enjoy!
