Slow Cooker Mississippi Pot Roast

Why Is It Called Mississippi Pot Roast?
About 20 years ago, a woman named Robin Chapman was looking for a twist on the classic pot roast recipe that her aunt used to serve (using Italian dressing). She wanted something a little milder that her whole family would enjoy and came up with this flavor combination of the au jus mix, ranch mix, butter, and peppers. She never called it Mississippi pot roast, but because she was from Mississippi and as this dish took on popularity, the name stuck.
Slow Cooker Mississippi Roast Recipe
How To Make:
Ingredients:
1 chuck roast 3 – 4 lbs
1 Hidden Valley Dips Ranch packet 1 oz
1 Au Jus Gravy Mix packet 1 oz
8 tablespoons salted butter (1 stick)
1 jar mild pepper rings 16 oz
Directions:
Take out a 5 or 6-quart crockpot and lay your beef roast in the bottom of the pot.
Sprinkle the packet of dry ranch dressing mix over the top of the roast.
Sprinkle the packet of au jus gravy mix over the top of the meat.
Place the whole stick of butter right on top of the roast and seasoning mixture.
Add about half the jar of banana peppers to the top of the meat and around it.
Cook on low for about 7 – 8 hours. Remove it from your large slow cooker when you are ready to serve.
Before serving, put the rest of the peppers over your delicious roast and enjoy!
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
What Am I Looking For In The Cut Of Meat I Choose?
For this delicious pot roast recipe, I highly recommend using a chuck roast. You want a cut of beef that is marbled with fat. Over the course of the cooking time, the excess fat will melt and help to create the tender roast that you’re looking for.
Some people prefer to use different cuts of meat like roast beef (or top round roast), but I think the best roast comes from the beef cut meant for this slow cooker recipe – the chuck roast.
Should I Sear My Roast Before Slow Cooking?
No, this Crockpot butter beef recipe does not require you to sear your meat before slow cooking. Some popular recipes do ask you to cook your meat first, but that extra step isn’t necessary here. This is meant to be a one-pot meal that will take you minimal effort and produce a delicious flavor, so the first time you make this, try it without the browning step.
If you decide that you want to add a sear the next time, take out a large skillet and some olive oil and sear your meat for a few minutes on each side. Don’t cook it too long or you will lose some of the slow cooker goodness you want.
Should I Use Banana Peppers or Pepperoncini Peppers?
For this Crockpot Mississippi Pot Roast recipe, you can use either one. Banana peppers are typically a little sweeter than pepperoncini, but because they are pickled in the jar and the long cooking method, you likely won’t be able to tell the difference.
What Can I Serve With This Slow Cooker Pot Roast?

You can serve some egg noodles on the side, a baked potato (or Loaded Hasselback Potatoes), garlic mashed potatoes, sweet potatoes, or your favorite vegetables.
