Using simple ingredients that you may already have in your pantry, even the most novice cook can have this delicious stuffed chicken breast recipe on the dinner table in around half an hour. 

Recipe Notes:

  • The amount of salt needed will depend on your palate. After making the creamy spinach stuffing, taste-test it to see if you want to add more salt. 
  • Red chili powder is optional for a touch of extra flavor and a pop of color, but it can be omitted. 
  • The cooking time for each chicken breast will vary based on the size of the breasts you use, so be sure to check that there is no pink left or measure an internal temperature of 165 degrees F with a meat thermometer at the thickest part of the chicken. 
  • While cooking your chicken, be careful not to press the chicken breasts or your spinach and cheese filling will leak out.

How To Make Spinach And Cheese Stuffed Chicken Breasts

Spinach And Cheese Stuffed Chicken Breasts Ingredients:

2 large boneless skinless chicken breasts
1/2 cup fresh spinach, chopped
2 tablespoons cream cheese, room temperature
1 1/2 tablespoons parmesan cheese, grated
2 tablespoons mayonnaise
5-6 fresh basil leaves, chopped
1/2 teaspoon chili flakes or red pepper flakes
1 tablespoon garlic, chopped
1 teaspoon onion powder
2 tablespoons olive oil or vegetable oil
1/2 teaspoon black pepper
1/2 teaspoon red chili powder (optional)
Salt (to taste)

Supplies Needed:

Large mixing bowl
Wooden spoon or rubber spatula
Cutting board
Sharp knife
Cast iron skillet or large frying pan
Flexible spatula

Directions:

Step 1: In a large bowl, mix together the cream cheese, parmesan cheese, and mayonnaise. Stir until you’ve got a smooth texture.

Step 6: In a large skillet, heat the oil over medium heat.

Depending on the size of your breasts this should be between 6-8 minutes per side.

Yes! The easiest option is to grab some regular or baby spinach from the produce section of your grocery store, but you can absolutely use frozen spinach in a pinch. Just make sure that you’ve squeezed all of the water out before you add it to the mixture.

Can I Use Different Kinds Of Cheeses In This Stuffed Chicken Recipe?

Yes! This delicious meal contains two types of cheese as it is: parmesan cheese and cream cheese. 

You can replace the parmesan cheese with a firmer cheese such as mozzarella cheese, cheddar cheese, or feta cheese, or a richer cheese such as goat cheese. 

You can use either full-fat cream cheese or light cream cheese in this recipe, but if you want to substitute something else, opt for a creamier option like Boursin cheese or even sour cream in a pinch. 

Is There Anything Else I Can Add To This Easy Stuffed Chicken Breast Recipe?

Yes! This delicious dinner recipe is fantastic just as it is, so I highly recommend following the original instructions the first time you make it, but if you want to tinker with it next time, there are a few things you could add. 

The easiest thing to alter is the cheesy spinach filling. Leaving all of the current ingredients in the spinach mixture, you could easily add some chopped up sun-dried tomatoes or brussels sprouts.

If you aren’t a huge fan of spinach, you could also swap that out for broccoli and have a broccoli cheese mixture instead.

Can I Turn These Into Stuffed Chicken Rolls? 

Yes! There are different ways to make stuffed chicken and if you’d like to make these into thinner stuffed chicken rolls like my Asparagus Stuffed Chicken with Provolone, you can do that easily. 

Slice each of your chicken breasts lengthwise so that each one yields two wide and thin breasts. 

Covering each one with a piece of plastic wrap or wax paper, flatten the chicken with a meat mallet or heavy pan. Season each piece with your seasonings and set them aside. 

Taking each of the four tender chicken breasts separately, scoop one tablespoon of the spinach dip stuffing and place it in the middle of the meat. Wrap the piece of chicken around the filling and fasten it with a toothpick. 

Pan fry the rolls, being sure to turn them in the pan so that all sides cook evenly. Serve hot and enjoy!

  • 2 large chicken breasts

  • 2 tablespoons cream cheese, room temperature
