How To Make Cheeseburger Soup:
Ingredients For Cheeseburger Soup:
1 lb ground beef
3/4 cup onion, chopped
1 tsp dried parsley
4 cups medium potatoes, peeled and cubed
4 cups chicken broth
1/4 cup all-purpose flour
16 oz Velveeta cheese, cubed
1 1/2 cups milk
1 tsp salt
1 tsp pepper
1/4 cup sour cream
5 strips bacon, cooked
Shredded cheddar cheese (optional)
Green onions, chopped (optional)
Supplies Needed:
6-Quart Crockpot
Large skillet
Silicone spatula
Cutting board
Sharp knife
Directions:
Step 1: Take out a 6-quart crockpot and set it aside. In a large skillet, cook your ground beef over medium-high heat and drain the excess grease. Place the cooked meat into the large slow cooker bowl.
Step 2: Chop up your potatoes, onions, and Velveeta cubes. You’re cubing your Velveeta to help the cheese melt more easily.
Step 3: Add the chopped onion, parsley, potato cubes, chicken stock, flour, Velveeta, milk, kosher salt, black pepper, and sour cream to the large pot with your tender ground beef.
Step 4: Cook on low for 5-6 hours. Soups taste better the longer you let the soup form, so air on the side of 6 hours if you can let the soup cook longer.
Step 5: A couple of minutes before you are ready to serve your cheesy soup, cook five (or more) pieces of bacon in a skillet, oven, or microwave (whatever your favorite method).
Step 6: Crumble or cut up your crispy bacon, reserving a little bit to put on top of each bowl of soup. Place the rest into the slow cooker cheeseburger soup and stir.
Step 7: Garnish the finished soup with the reserved bacon bits, some extra cheese, and/or green onions, and serve. Enjoy!
