This delicious Crockpot Cheeseburger Soup is perfect for a cold winter day. Whether you are looking for a good soup for the colder months or something new to serve picky eaters, this is easily going to become a family favorite. 

The best part about this Crockpot soup recipe is that you can meal prep it the night before and cut down on your prep time the next day. It will still have the best flavor with simple ingredients that you can get at any grocery store. 

The funny thing about this great soup is that you could also call it a Slow Cooker Loaded Potato Soup or a Cheeseburger Chowder. It is a little bit of everything, but the bottom line is that this tasty soup is good food that is perfect after a long day.

How To Make Cheeseburger Soup:

Ingredients For Cheeseburger Soup:

1 lb ground beef
3/4 cup onion, chopped
1 tsp dried parsley
4 cups medium potatoes, peeled and cubed
4 cups chicken broth
1/4 cup all-purpose flour
16 oz Velveeta cheese, cubed
1 1/2 cups milk
1 tsp salt
1 tsp pepper
1/4 cup sour cream
5 strips bacon, cooked
Shredded cheddar cheese (optional)
Green onions, chopped (optional)

Supplies Needed:

6-Quart Crockpot
Large skillet
Silicone spatula
Cutting board
Sharp knife

Directions:

Step 1: Take out a 6-quart crockpot and set it aside. In a large skillet, cook your ground beef over medium-high heat and drain the excess grease. Place the cooked meat into the large slow cooker bowl.

Yes! This recipe calls for lean ground beef because an actual cheeseburger is typically made with beef, but you can absolutely choose something else. Ground turkey or ground chicken will work in this creamy cheeseburger soup, or you can go vegetarian and choose veggie crumbles instead. What Potatoes Should I Use For This Easy Recipe?

I used russet potatoes because they are so hearty, but you can choose something else. Red potatoes or Yukon Gold potatoes are good options that will combine well with the cheeseburger flavor. The most important thing is that you slice them such that you end up with tender potatoes at the end of cooking.

I Ran Out Of Sour Cream – Can I Substitute Another Ingredient?

Yes! This comes up often, so if you don’t have sour cream handy, you can use cream cheese instead. Add about 2 oz cream cheese in place of your sour cream and you’re good to go. 

Can I Make This Slow Cooker Soup Vegetarian? 

Yes! If you’re looking to make this comforting soup a vegetarian option, use vegetable broth instead of chicken broth, veggie crumbles in place of ground beef, and either omit the bacon or use veggie bacon. Voila!

Can I Make Other Substitutions In This Creamy Cheese Soup?

I recommend you try making the original recipe the first time you cook this dish, but there are easy ways to alter it for next time. You can use beef broth instead of chicken, but there won’t be a huge difference in flavor because this is a thicker soup with many different ingredients that impact the final result. So use what you have on hand. 

You can also use mild cheddar or sharp cheddar cheese, whole milk or skim milk, turkey bacon or pork bacon when assembling your soup. Whether you have a picky eater at home or it’s a cold day where you need a hot dish, you’ll want to make sure everyone is happy with what you’re cooking.

Ingredients

  • 1 lb ground beef
  • 3/4 cup onion, chopped
  • 1 tsp dried parsley
  • 4 cups potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1/4 cup flour
  • 16 oz Velveeta cheese, cubed
  • 1 1/2 cups milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup sour cream
  • 5 strips bacon, cooked

Instructions

  1. Take out a 6-quart crockpot and set it aside.
  2. In a large skillet, cook your ground beef and drain the fat.
  3. Place your ground beef in the crockpot.
  4. Add the onion, parsley, potatoes, chicken broth, flour, Velveeta, milk, salt, pepper, and sour cream to the crockpot.
  5. Cook on low for 5-6 hours.
  6. When you are near ready to serve your soup, cook five (or more) pieces of bacon (whatever your favorite method of prep).
  7. Crumble or cut up your bacon, reserving a little bit to put on top of each bowl of soup.
  8. Place the rest of the bacon into the crockpot and stir.
  9. Garnish with the reserved bacon, a little shredded cheese, and/or green onions and serve.
