Crockpot Cheeseburger Soup with Bacon is a great recipe full of cheesy goodness! Rich and filling, this is the best soup for cold days!
Easy Cheeseburger Soup
This delicious Crockpot Cheeseburger Soup is perfect for a cold winter day. Whether you are looking for a good soup for the colder months or something new to serve picky eaters, this is easily going to become a family favorite.
The best part about this Crockpot soup recipe is that you can meal prep it the night before and cut down on your prep time the next day. It will still have the best flavor with simple ingredients that you can get at any grocery store.
The funny thing about this great soup is that you could also call it a Slow Cooker Loaded Potato Soup or a Cheeseburger Chowder. It is a little bit of everything, but the bottom line is that this tasty soup is good food that is perfect after a long day.
If you’re looking to make this comforting soup a vegetarian option, use vegetable broth instead of chicken broth, veggie crumbles in place of the ground beef, and either omit the bacon or use veggie bacon. Voila!
A creamy soup with the flavors of a cheeseburger (plus fries!), this will easily become a favorite meal that you’ll find yourself making regularly. Want to make it even more like eating a regular cheeseburger? Add some dill pickles on the side and toast some sesame bun croutons to serve on top! Your taste buds will be impressed!

Crockpot Cheeseburger Soup Recipe
How To Make:
1 lb ground beef
3/4 cup onion, chopped
1 tsp dried parsley
4 cups medium potatoes, peeled and cubed
4 cups chicken broth
1/4 cup flour
16 oz Velveeta cheese, cubed
1 1/2 cups milk
1 tsp salt
1 tsp pepper
1/4 cup sour cream
5 strips bacon, cooked
Shredded cheddar cheese (optional)
Green onions, chopped (optional)
Take out a 6-quart crockpot and set it aside. In a large skillet, cook your ground beef over medium high heat and drain the excess grease. Place the cooked meat into the large slow cooker bowl.
Chop up your potatoes, onions, and Velveeta cubes. You’re cubing your Velveeta to help the cheese melt more easily.
Add the chopped onion, parsley, potato cubes, chicken stock, flour, Velveeta, milk, kosher salt, black pepper, and sour cream to the large pot with your tender ground beef.
Cook on low for 5-6 hours. Soups taste better the longer you let the soup form, so air on the side of 6 hours if you can let the soup cook longer.
A couple of minutes before you are ready to serve your cheesy soup, cook five (or more) pieces of bacon in a skillet, oven, or microwave (whatever your favorite method).
Crumble or cut up your crispy bacon, reserving a little bit to put on top of each bowl of soup. Place the rest into the slow cooker cheeseburger soup and stir.
Garnish the finished soup with the reserved bacon bits, some shredded cheese, and/or green onions, and serve.
This Crock-Pot Cheeseburger Soup pairs perfectly with some crusty bread. Enjoy!
Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze this hearty soup for 4 to 6 months for the best results.
Can I Use Different Meat In This Easy Bacon Cheeseburger Soup Recipe?
Yes! This recipe calls for lean ground beef because an actual cheeseburger is typically made with beef, but you can absolutely choose something else. Ground turkey or ground chicken will work in this creamy cheeseburger soup, or you can go vegetarian and choose veggie crumbles instead. Whatever spells comfort food to your whole family is the right choice. It’ll be a huge hit either way!
What Potatoes Should I Use For This Easy Recipe?
I used russet potatoes because they are so hearty, but you can choose something else. Red potatoes or Yukon Gold potatoes are good options that will combine well with the cheeseburger flavor. The most important thing is that you slice them such that you end up with tender potatoes at the end of cooking.
I Ran Out Of Sour Cream – Can I Substitute Another Ingredient?
Yes! This comes up often, so if you don’t have sour cream handy, you can use cream cheese instead. Add about 2 oz cream cheese in place of your sour cream and you’re good to go.
Can I Make Other Substitutions In This Creamy Cheese Soup?
I recommend you try making the original recipe the first time you cook this dish, but there are easy ways to alter it for next time. You can use beef broth instead of chicken, but there won’t be a huge difference in flavor because this is a thicker soup with many different ingredients that impact the final result. So use what you have on hand.
You can also use mild cheddar or sharp cheddar cheese, whole milk or skim milk, turkey bacon or pork bacon when assembling your soup. Whether you have a picky eater at home or it’s a cold day where you need a hot dish, you’ll want to make sure everyone is happy with what you’re cooking.
