Cast Iron Cornbread Chili
When looking for a hearty dinner, I often like to turn to something with meat and beans. This Cornbread Chili Casserole is the answer!
Made in a cast iron skillet, this cornbread chili is made with Trader Joe’s or Jiffy mix and ground beef. It is a fantastic meal on a cold day and contains everything you need in one dish.
Jiffy cornbread mix is not gluten-free, but you can easily turn this into a gluten-free dish if you use a gluten-free cornbread mix instead. Look for them in the gluten-free section of your grocery store or on Amazon, but there are a few that I’ve seen out there. If you have a Trader Joe’s near you, they make a gluten-free option.
Chili Cornbread Skillet
1 lb ground beef, cooked and crumbled
1 package Trader Joe’s cornbread mix 15 oz (or 2 Jiffy 8.5 oz)
1 onion, diced
1 can fire roasted diced tomatoes 28 oz, undrained
1 can corn 8 oz, drained
1 can chili beans 15 oz, undrained
1 can navy beans 15 oz, drained and rinsed
1 tsp garlic powder
1 tsp cumin
2 tsp chili powder
Salt (to taste)
Preheat your oven to 375 degrees and take out a cast iron skillet 10″ or larger.
In a separate pan on the stove, brown your ground beef so that it is cooked through and crumbles apart easily.
Prepare the cornbread mix according to the package directions and set the batter aside. Do not bake it.
Taking your skillet, add the meat, onions and seasonings. Add the diced tomatoes with juice, chili beans with liquid, navy beans with no liquid (drained and rinsed) and corn (drained). Once everything is added, mix well to distribute everything evenly.
Pour the cornbread batter over the top and spread it evenly over the chili.
Bake in the oven for about 25-30 minutes or until the cornbread is cooked through.
Serve with cheese and/or sour cream and enjoy!
