Crockpot Meatball Soup
Soup is the perfect meal when you need something to warm you from the inside. This Slow Cooker Meatball Soup is a great option for lunch or dinner whenever you need that cozy feeling.
There are lots of crockpot meatball soup recipes around, but this one has beans, corn and carrots, so it’s a little more hearty. I also don’t like to specify the beans, so make sure to pick the ones you love the most! I am a fan of the dark red kidney beans because I like that additional texture, but you can go for a black bean or pinto bean as well. Whatever you have on-hand.
This recipe is naturally gluten free, egg free and dairy free (if you omit the parmesan cheese). You can turn it into a vegetarian option if you use vegetable broth instead of beef broth and choose frozen vegetarian meatballs.
You can also stretch it a little further by adding mushrooms or some additional beans and corn. There is a lot that you can tinker with here!
Meatball Bean Soup
1 lb meatballs, frozen, pre-cooked
19 oz mixed beans, canned (containing any beans you choose, drained and rinsed)
2 carrots, sliced into medallions
1 cup corn, frozen
28 oz diced tomatoes, canned
1 tsp Italian seasoning
Salt, pepper, and garlic powder to taste
6 cups beef broth
1/2 cup parmesan cheese (garnish)
Pull out a 5 or 6-quart slow cooker, whatever you have on-hand. Chop your carrots into round medallions and set them aside.
Place the frozen meatballs in the bottom of the slow cooker. Add the beans, carrots, corn, diced tomatoes, Italian seasoning, and a few shakes of salt, pepper, and garlic powder.
Pour your beef broth over all of it and stir, making sure the meatballs stay on the bottom.
Cook on low for 5 – 6 hours or on high for 3 – 4 hours, making sure that your carrots are tender and your meatballs are heated completely before serving. Soup always tastes better the longer you leave it, so I highly suggest going with the longer heating times vs. the shorter.
Once your soup is ready, spoon it into serving bowls and garnish each with shredded parmesan cheese. Serve with some nice crusty bread on the side and enjoy!
