Soup is the perfect meal when you need something to warm you from the inside on a cold day. This Slow Cooker Meatball Soup is one of those delicious and easy recipes that you can make whenever you need that cozy feeling. 

There are lots of crockpot meatball soup recipes around, but this one has beans, corn, and carrots, so it’s a more hearty meal. I also don’t like to specify the beans, so make sure to pick the ones you love the most!

This dinner recipe is naturally gluten-free, egg-free, and dairy-free (if you omit the parmesan cheese). You can turn it into a vegetarian option if you use vegetable broth instead of beef broth and choose frozen vegetarian premade meatballs.

Slow cooking is the answer on long days when you need some comfort food, so this easy dump-and-go recipe is a tasty way to put together a delicious meal.

With simple ingredients that you can pick up at almost any grocery store, this is sure to become a family favorite!

Recipe Notes:

  • If you would prefer to make this a chicken soup, replace the beef stock with chicken broth and use ground chicken meatballs. 
  • Choose your favorite beans for this easy recipe. I like dark red kidney beans because I like that additional texture, but you can use black beans, cannellini beans, or pinto beans – whatever you have on hand. 
  • Soup always tastes better the longer you leave it, so I highly suggest going with the longer heating times vs. the shorter ones to let the soup form fully.

How To Make Slow Cooker Meatball Soup Recipe

Slow Cooker Meatball Soup With Beans Ingredients:

1 lb meatballs, frozen, pre-cooked
19 oz mixed beans, canned (containing any beans you choose, drained and rinsed)
2 carrots, sliced into medallions
1 cup corn, frozen
28 oz diced tomatoes, canned
1 teaspoon Italian seasoning
6 cups beef broth 
Salt, pepper, and garlic powder to taste
1/2 cup parmesan cheese (garnish)

Supplies Needed:

Cutting board
Sharp knife
6- or 5-quart Crock-Pot

Directions:

Step 1: Chop your carrots into round medallions and set them aside. 

Step 2: Pull out a 5 or 6-quart slow cooker.

Step 3: Place the frozen meatballs in the bottom of the slow cooker. Add the beans, carrots, corn, diced tomatoes, Italian seasoning, and a few shakes of salt, black pepper, and garlic powder.

Step 5: Cook on low heat for 5 – 6 hours or on high heat for 3 – 4 hours, making sure that your carrots are tender and your juicy meatballs are heated completely before serving.

Step 6: Once your hearty soup is ready, spoon it into serving bowls and garnish each with shredded parmesan cheese.

Serve with some nice crusty bread or garlic bread, and a simple green salad for a complete meal, and enjoy!

How To Store Leftover Slow Cooker Meatball Soup With Beans

After allowing the soup to cool to room temperature, store any leftover soup in an airtight container in the refrigerator for 3-4 days.

The great thing about this simple recipe is that you can use whatever flavorful meatballs you have on hand. This recipe calls for frozen meatballs, but you can also use homemade meatballs that you’ve frozen, turkey meatballs, Italian meatballs, mini meatballs, or any family favorites.

If you are using ground beef or ground turkey meatballs that have not been frozen, note that they may take on a slightly looser consistency with the long cooking time.

  • 2 carrots, sliced into medallions
  • 1 cup corn, frozen
  • 28 oz diced tomatoes, canned
  • 1 tsp Italian seasoning
  • Salt, pepper, and garlic powder to taste
  • 6 cups beef broth
  • 1/2 cup parmesan cheese (garnish)

Instructions
