Chocolate Mint Cookies
St. Patrick’s Day is right around the corner, so treat the leprechauns in your life to this Double Chocolate Cookies with Minty M&M’s recipe! These don’t have to be for St. Patrick’s Day – they are really delicious dessert for any time of year – but maybe make them on the days when you need a little extra luck.
Chocolate mint cookies may not be something you see homemade often, but I’m not sure why. Mint chocolate is such a classic flavor combination, whenever I make them or my Mint Chocolate Trifle, I get grateful comments from the crowd.
By the same token, if you have people who aren’t crazy about the mint chocolate combination, you could use regular M&M’s in a few double chocolate cookies. The mint in this recipe comes from the minty M&M’s, so you can allow everyone to enjoy their favorites in the way they were hoping. That way everybody wins.
This recipe is vegetarian and nut-free, so a good option as holiday cookies, St. Patrick’s day cookies or even a local bake sale.
Mint M&M Cookies
1 cup all purpose flour
3/4 cup packed brown sugar
1/4 cup sugar
1 stick salted butter (8 Tbsp), softened
1 tsp vanilla
2/3 cup cocoa powder
1/2 tsp baking soda
1/2 chocolate chips
1 cup mint M&M’s
Preheat your oven to 350 degrees. Line a baking sheet with parchment paper and set it aside.
Add in your egg, flour, vanilla, cocoa, and baking soda and continue to mix. Pour in your chocolate chips and most of your mint M&M’s (keep some to press on the top of the cookies).
Scoop out your dough with a spoon and roll each cookie into a dough ball.
Press a few M&M’s into the top of each cookie and bake for 10 minutes.
Remove them from the oven when they are ready. Allow them to cool completely and enjoy them with a glass of green milk! (Food coloring makes all kinds of food fun!)
