I don’t know about you, but I don’t always have time to cook up a full meal. I have a family of four that I have to feed and I have to do it on the fly fairly often. During the summer, not only do I not have the time to cook, I also don’t want to heat up the house with the stove. You can’t always avoid it, but coming up with solutions to these issues has become a bit of a pastime for me!
During the summer months, iced tea and Diet Coke® are both staples in my home. So when I saw that Jewel sells a signature meal deal that can include a large bottle of Gold Peak® and/or a Coca-Cola™ product, I was excited! This was an ideal solution for me for so many reasons. Not only are the beverages a perfect fit for my family (my son will actually drink as much iced tea as you’ll let him), but the chicken and sides will feed us a great meal on the fly and leave leftovers. I can have everything on the table in minutes.
I bought the signature meal deal at my local Jewel-Osco this last weekend, where all of the food was available at the deli counter. The rotisserie chicken was in the heated section on the end and the deli worker was able to give me my choice of two sides (I chose tater babies and macaroni salad). She also put a four pack of rolls in my bag (which was included with the deal) and I picked up a Diet Coke bottle and Gold Peak Tea in the beverage aisles. I was out of the store in ten minutes and on my way home.
After having our meal, I picked off all the extra chicken from the rotisserie and used it to make lunch for the next day. Two meals in one! Plus, with Gold Peak Tea left in the huge 64 oz jug I purchased, we would have a light and cool lunch already prepared whenever we were ready. I made an easy chicken salad that you can make as well. Using dried cranberries and slivered almonds, I had my dish made and in the fridge in less than 15 minutes. Here’s the recipe, which went beautifully with the beverages!
1 1/2 cup chicken, shredded
1/3 cup dried cranberries
1/8 cup slivered almonds
1/2 cup mayonnaise
salt to taste
Shred your leftover chicken and place it in a medium sized bowl. Add your cranberries and almonds to the bowl. Top with your mayonnaise and stir until everything is thoroughly mixed. Add a little salt (to taste) and serve on buns.
