Easy Hot Cocoa Cookies

If you are always on the lookout for a great cup of hot chocolate, you have to try this fun twist on your favorite drink. These Hot Chocolate Cookies with Chocolate Marshmallow Glaze are the perfect way to have your favorite flavors any time of year!

Some of my favorite cookies, these are great for chocolate lovers and cookie lovers alike. Using simple ingredients that you can get at any grocery store, these tasty treats are gooey and sticky in all of the best ways. 

Delicious cookies that are perfect as Christmas cookies, for a holiday cookie exchange, or just because it’s a Wednesday, after you bake them the first time, the entire family will be asking when you are going to make them again!

Recipe Notes:

  • You can use either a hand mixer or a stand mixer to combine your dough. 
  • Be sure to keep each dough ball 1-inch to 2-inches away from each other on the baking tray. 
  • For the top of the cookie, you can use either marshmallow bits or small marshmallows depending on what you have and the texture you prefer. You can also cut large marshmallows into pieces in a pinch. 
  • If you don’t have chocolate sauce, you can melt chocolate chips and drizzle the melted chocolate over the cookies instead.

How To Make Hot Chocolate Cookies With Chocolate Marshmallow Glaze

Hot Chocolate Cookie Ingredients:

Chocolate Cookies:
1 box sugar cookie mix
1 large egg
1/2 cup hot cocoa mix
1/2 cup butter, softened

Chocolate Marshmallow Glaze:
1/2 stick butter, softened
1/3 cup mini marshmallows
1 teaspoon vanilla extract
3 tablespoons chocolate syrup
Dehydrated marshmallow bits or mini marshmallows

Supplies Needed:

Large mixing bowl or the bowl of a stand mixer
Large whisk
Rubber spatula
Electric mixer
Small cookie scoop
Medium microwave-safe bowl
Pastry bag or resealable bag
Small spoon

How To Make Chocolate Cookies

Step 1: Preheat the oven to 350 degrees and line a large cookie sheet with parchment paper or a silicone liner. 

A bunch of bowls full of sugar cookie cake mix, an egg, butter cubes, marshmallow bits, water, mini marshmallows, and hot chocolate powderStep 2: In a large bowl, add the sugar cookie mix and the hot chocolate mix. Whisk them to combine.

Step 5: Bake for 10-12 minutes or until the bottoms are turning golden brown.

Step 6: Once ready, allow the chewy cookies to cool to room temperature on the sheet tray or a wire rack. 

How To Make Chocolate Marshmallow Glaze

Step 1: In a microwave-safe bowl, combine the mini marshmallows and butter.

Step 3: Whisk the hot water and powdered sugar into the melted marshmallow mixture until it is smooth.

How To Assemble Hot Chocolate Cookies

Step 1: Add the gooey marshmallow glaze to a piping bag or Ziploc bag.

How To Store Hot Chocolate Cookies

Store your leftover gooey Hot Chocolate Cookies in an airtight container or on a plate wrapped tightly in plastic wrap on the counter for up to a week.

A few marshmallows may fall off the tops of the cookies if you’ve stacked them, but you can put them right back on when you remove the cookies from the container.

What Kind Of Hot Cocoa Powder Should I Use?

You can use whatever cocoa mix you would normally use for a cup of hot cocoa. This can be dark chocolate or milk chocolate – it is up to you. 

That said, be sure that you are not using unsweetened cocoa powder in this hot chocolate cookies recipe. There is a big difference and you want the sweetened chocolate flavor that you’ll get from regular hot chocolate mix.

Can I Add Chocolate Chips To This Hot Cocoa Cookie Recipe? 

Yes! If you want to turn these into double chocolate chip cookies before adding the toppings, you can add milk chocolate chips or semi-sweet chocolate chips to the batter before scooping out your cookie dough balls. 

That will give you hot chocolate chip cookies that you can continue to glaze and add your toppings.

Ingredients

Chocolate Cookies:

  • 1 box sugar cookie mix
  • 1 large egg
  • 1/2 cup hot cocoa mix
  • 1 stick of butter, softened

Chocolate Marshmallow Glaze:

  • 1/2 stick butter, softened
  • 1/3 cup mini marshmallows
  • 1 teaspoon vanilla extract
  • 3 tablespoons chocolate syrup
  • Dehydrated marshmallow bits or mini marshmallows

Instructions

  1. Preheat the oven to 350 degrees and line a large cookie sheet with parchment paper or a silicone liner. 
  2. In a large bowl, add the sugar cookie mix and the hot cocoa mix. Whisk them to combine. 
  3. Using an electric mixer, add your egg and butter to the bowl and combine everything well, being sure to scrape the sides of the bowl.
  4. Using a small ice cream scoop, drop balls of cookie batter onto the prepared baking sheet, about 1-2” apart.
  5. Bake for 9-12 minutes or until the bottoms are turning golden brown.
  6. Once ready, allow them to cool completely on the sheet tray or a wire rack. 
  7. In a microwave safe bowl, combine the mini marshmallows and butter.
  8. Microwave on high for 25 seconds. Stir and repeat until the marshmallows and butter are melted.
  9. Whisk in the hot water and powdered sugar until the mixture is smooth.
  10. Add the glaze to a piping bag or Ziploc bag. Drizzle the glaze over each of the cookies.
  11. Sprinkle them with marshmallow bits or mini marshmallows.
  12. Using a small spoon, drizzle the chocolate syrup onto the cookies and enjoy!
