Chocolate Chip Peanut Butter Cookie Bars

My favorite recipes to make are those that I can easily make with my daughter, and this is one of them! These chewy Peanut Butter Chocolate Chip Cookie Bars (also known as Peanut Butter Blondies) are delicious and super easy to make. 

This is an easy recipe where you can let your child do all of the mixing and prep while you watch and assist. And if you don’t have a young child, you’ll be happy with how easy it is for you to make as well! 

Perfect for peanut butter lovers, these Chocolate Chip Peanut Butters use simple ingredients that you can get at most grocery stores. 

And while you may be used to making classic cookies for your holiday cookie exchange, don’t count this easy cookie bar recipe out. A combination of new things and old things is always fun!

Recipe Notes:

  • When you add the chips to the batter, be careful to mix them in just enough. You don’t want to overmix or the beaters will break up the chips. 
  • You will know that your batch of cookies is fully baked when you see crispy edges and chewy cookie bars in the middle. 
  • These easy cookie bars can be as large or as small as you like. Ideally, you’d have 12 or 16 individual cookies after slicing. 
  • Have some leftover Reese’s Pieces from your Halloween candy? Add them to the top of the bars or mix them into the cookie dough as a fun twist on the original recipe!

How To Make Peanut Butter Chocolate Chip Cookie Bars Recipe

Peanut Butter Chocolate Chip Cookie Bars Ingredients:

3/4 cup butter (softened to room temperature)
3/4 cup granulated sugar
3/4 cup brown sugar, packed
1/2 cup creamy peanut butter
2 large eggs
1 1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 cup chocolate chips, overflowing (the overflow will be to sprinkle on top)
1/2 cup peanut butter chips, overflowing (the overflow will be to sprinkle on top)

Supplies Needed:

9×13-inch baking pan
Aluminum foil, parchment paper, or nonstick spray
Electric mixer 
Rubber spatula

Directions:

Step 1: Preheat your oven to 350 degrees and line a 9×13-inch pan with foil or parchment paper.

If you’re using foil, spray it with a non-stick cooking spray; for parchment paper, you won’t need to.

Step 2: Using a stand mixer or large bowl, mix the softened butter, sugar, brown sugar, eggs, peanut butter, and vanilla. 

Step 3: Slowly add the flour and baking powder to your mixture. Make sure that everything has been incorporated, being sure to scrape the sides of the bowl.

Step 5: Evenly spread the cookie dough into your prepared pan. Sprinkle the top of the dough with the extra baking chips of each flavor.

Step 7: Remove your pan from the oven and allow the bars to cool completely in the baking dish. If you’d prefer to cool your peanut butter bars on a wire rack or cookie sheet, you can.

Can I Use Different Kinds Of Peanut Butter In These Peanut Butter Chocolate Chip Bars?

Yes! This easy recipe calls for creamy peanut butter, but you could easily replace it with crunchy peanut butter. I have not tried these specific peanut butter cookies with natural peanut butter, so please leave a comment if you do. I’d love to know how they turn out! 

What Kind Of Chocolate Chips Should I Use?

You’ll notice that I don’t specify what chocolate chips to use in these delicious bars, and that’s because I want you to choose your favorite.

If you like dark chocolate chips, milk chocolate chips, white chocolate chips, or even broken-up peanut butter cups, they will work. When matched with the peanut butter flavor, it’s like your favorite chocolate chip cookies in bar form and on a whole other level. 

Can I Make These Gluten-Free Cookie Bars?

This chewy Peanut Butter Cookie Bars recipe has fairly standard ingredients, but if you are looking for a gluten free option, you will need to change up the dry ingredients.

Most gluten-free flour mixes will measure equally with standard all-purpose flour, so that will be your easiest swap. You’d be specifically looking for gluten-free all-purpose flour at the grocery store. 

You could use almond flour or coconut flour, but you should do some research as to how to alter the baking powder or the amount of alternative flour you will be using. It is not quite 1:1.

Ingredients

  • 3/4 cup butter (softened to room temperature)
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 2 1/2 cups flour
  • 1 Tbsp baking powder
  • 1/2 cup overflowing chocolate chips (the overflow will be to sprinkle on top)
  • 1/2 cup overflowing peanut butter baking chips (the overflow will be to sprinkle on top)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a 9x13 inch baking pan with foil or parchment paper. If using foil, spray with a non-stick cooking spray.
  3. In a bowl or stand mixer, combine the softened butter, sugar, brown sugar, eggs, peanut butter and vanilla.
  4. Slowly add in the flour and baking powder.
  5. Lastly, add in most of the chocolate chips and peanut butter chocolate chips and mix just until incorporated.
  6. Evenly spread the cookie dough in the 9x13 baking pan.
  7. Sprinkle the top of the cookie dough with a few extra baking chips.
  8. Bake 20-25 minutes.
  9. Remove from the oven and allow the bars to cool completely.
  10. Once cooled, lift the foil/parchment paper up and out of the pan, then cut into bars.
