Homemade Reese’s S’mores
These are the best homemade Reese’s Peanut Butter Cups S’mores ever! With dark chocolate, peanut butter cookies, marshmallows and Reese’s Peanut Butter Cups, you just can’t go wrong! Be ready to swoon – and pack them for your next movie night or camp out!
These Reese’s S’mores are a little different from others because you will actually be making homemade peanut butter cookies instead of using graham crackers. With the extremely classic recipe, you would use Hershey’s chocolate, graham crackers and a roasted marshmallow, but why not change things up a bit?
The other fun variation that you can do with these Reese’s Peanut Butter Cup S’mores is swap out the marshmallow for Peeps. If you have some marshmallow Peeps handy, turn them into s’mores marshmallows!
If you prefer to use store-bought peanut butter cookies, feel free, but make sure they contain nut pieces. The nuts provide a bit more crunch, so that when everything else is soft and sticky with a melted center, you have some additional texture.
Reese’s S’mores Recipe
Cookies (makes approximately two dozen)
1 cup creamy peanut butter
1 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 cup chopped peanuts
– Per S’more you will need
2 peanut butter cookies
3 full size Reese’s Peanut Butter Cups
2 large marshmallows or marshmallow Peeps
1/4 cup Wilton dark cocoa chocolate melts
First you’re going to bake the cookies. Preheat your oven to 350 degrees. Line a cookie sheet with parchment paper and set it aside.
In a large mixing bowl, add your peanut butter, sugar, egg, 1/4 cup of the chopped peanuts, and vanilla.
Mix them until they’re well combined. Form the cookie dough into 1 inch balls by rolling them in your hands.
Place the cookie dough balls on the cookie sheet, separated by about an inch. Using a drinking glass, gently press down on each cookie dough ball to flatten them. Sprinkle the other 1/4 cup of chopped peanuts on top of the cookies and press them down gently into the dough.
Bake for 14 to 15 minutes or until golden brown. Let your cookies cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.
Once your cookies are cool and ready, it’s time to make your s’mores!
On a microwave safe plate, lay a peanut butter cookie bottom side up. Place a full Reese’s Peanut Butter Cup on top of the cookie and one marshmallow on top of that peanut butter cup.
Prepare a second cookie, peanut butter cup and marshmallow this same way, on the same plate. Microwave them for 20 to 30 seconds – until everything looks a bit melty.
Place the third Reese’s Peanut Butter Cup on top of one of the marshmallows and place the other marshmallow/cup/cookie on top of that to make a sandwich.
In a microwave safe bowl, microwave the dark cocoa chocolate melts for 40 seconds, stopping to stir every 15 – 20 seconds. (If it doesn’t melt completely, continue microwaving and stirring until melted).
With a spoon, drizzle the melted chocolate on top of the cookie sandwich and serve immediately.
