While we’re all familiar with the traditional way of making s’mores on warm summer nights, this is a delicious peanut butter twist on a classic. With simple ingredients like Reese’s Peanut Butter Cups, marshmallows, and classic peanut butter cookies, these are about to be your new favorite thing.
These Reese’s S’mores are a little different from others because you will be making homemade peanut butter cookies instead of using graham crackers. With the campfire classic recipe, you would use Hershey’s chocolate bars, graham crackers, and a roasted marshmallow, but why not change things up a bit?
This easy peanut butter cookie recipe is one that you will want to keep in your back pocket in general. I usually make an extra batch of these cookies just because my whole family loves them as they are. They don’t last a long time in my house!
Also, if it’s springtime, a fun variation that you can do with these Reese’s Peanut Butter Cup S’mores is swapping out the marshmallows for Peeps. If you have some marshmallow Peeps handy, turn them into s’mores marshmallows before they go stale!
Recipe Notes:
- If you make the cookies ahead of time, you can make your Reese’s S’mores in minutes.
- You can use melted chocolate chips instead of candy melts.
- Use marshmallows for best results, but in a pinch, you can add some marshmallow fluff or marshmallow creme on top of the peanut butter cups.
- You can use dark chocolate or milk chocolate Reese’s Peanut Butter Cups.
How To Make Reese’s S’mores Recipe
Reese’s S’mores Ingredients:
Peanut Butter Cookies (makes approximately two dozen)
1 cup creamy peanut butter
1 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 cup chopped peanuts (separated)
Each Reese’s S’mores requires:
2 peanut butter cookies
3 full size Reese’s Peanut Butter Cups
2 large marshmallows or marshmallow Peeps
1/4 cup Wilton dark cocoa chocolate melts
Supplies Needed:
Baking sheets
Parchment paper or silicone mats
Large mixing bowl
Kitchen spoon or rubber spatula
Cookie scoop
Microwave-safe plate
Small bowl
How To Bake The Peanut Butter Cookies
Step 1: Preheat your oven to 350 degrees and line a cookie sheet or two with parchment paper. Set it aside.
Step 2: In a large bowl, add your cup of peanut butter, cup of white sugar, egg, 1/4 cup of chopped peanuts, and vanilla.
Mix them until they’re well combined, being sure to scrape the sides of the bowl.
Step 3: Using a cookie scoop, form the peanut butter cookie dough into 1-inch balls by rolling them in your hands.
Place your cookie dough balls on the prepared baking sheets, separated by a few inches.
Step 4: Using a drinking glass, gently press down on each cookie dough ball to flatten them.
Step 5: Sprinkle the other 1/4 cup of chopped peanuts on top of the cookies and press them down gently into the dough. You can use the tines of a fork to make cross-hatch marks on the top of each cookie if you’d like.
Step 6: Bake for 14 to 15 minutes or until golden brown.
Step 7: Allow your baked cookies to cool on the sheet pan for 5 minutes before transferring them to a wire rack to cool completely.
Once your PB cookies have reached room temperature on the cooling rack, use them immediately or store them for later.
How To Store Peanut Butter Cookies
Store these soft peanut butter cookies in an airtight container or freezer bag for up to 5 days.
How To Make Reese’s Smores
Step 1: On a microwave-safe plate, lay a peanut butter cookie bottom side up. Place a full Reese’s Peanut Butter Cup on top of the cookie and one fluffy marshmallow on top of that peanut butter cup.
Step 2: Prepare a second cookie, Reese’s cup, and marshmallow this same way on the same plate. Microwave them for 20 to 30 seconds – until everything looks a bit melty.
Step 3: Place the third Reese’s Peanut Butter Cup on top of one gooey marshmallow and place the other marshmallow/cup/cookie on top of that to make a sandwich.
Step 4: In a microwave-safe bowl, microwave the dark cocoa chocolate melts for 40 seconds, stopping to stir every 15 – 20 seconds. (If it doesn’t melt completely, continue microwaving and stirring until melted).
Step 5: With a spoon, drizzle the melted chocolate on top of the cookie sandwich and serve immediately. Enjoy!
What Kind Of Peanut Butter Should I Use?
I usually use smooth peanut butter because that is what we keep at home, but you could use crunchy peanut butter as well. The benefit of chunky peanut butter is that it already has pieces of nuts, so you’ve got that texture without the additional nut pieces.
You can also choose either shelf-stable processed peanut butter (I use Jif brand) or natural peanut butter. I have not tested this recipe with seed butters, but they should work out fine as well.
Can I Use Store-Bought Peanut Butter Cookies?
If you have the time to make them, these are the best peanut butter cookies and they will far surpass anything you buy at the store. That said, not everyone has time to bake, so premade cookies would be your next best option.
When you are buying classic peanut butter cookies at the store, make sure to find a soft cookie. Anything with crispy edges may make everything crumble apart.
Also, look for something that contains nut pieces. The nuts provide a bit more crunch so that when everything else is soft and sticky with a melty center, you have some additional texture.
