If you are a fan of Rice Krispie treats, it’s time to take it up a notch. These Fruity Pebbles Rice Krispie Treats Sandwiches are a classic treat with a fun twist. With gooey marshmallows, colorful Fruity Pebbles, and creamy frosting, it’s time to bring back one of your childhood favorites!
If you were like me, a box of Fruity Pebbles and Cocoa Pebbles were each a favorite childhood cereal that you only got on special occasions. Just seeing Fred Flintstone and Barney Rubble on the box meant a yummy breakfast and afternoon snack.
These Fruity Pebbles sandwiches are incredibly easy desserts and taste amazing. They are vegetarian and the perfect little no-bake dessert to make at the last minute or as an activity with the kids. Keep some fresh marshmallows and fresh cereal on hand as well as a tub of frosting and you can put this no-bake recipe together at a moment’s notice.
Depending on how many people you plan to serve, you may want to opt for a smaller sandwich than the ones I have pictured. To do this, choose a smaller circle cookie cutter and follow the same instructions. You can also make a single monster sandwich by cutting out a huge circle twice. It’s like making a whoopie pie with a fruity flavor!
A fun dessert that is a lot more interesting than cereal bars or traditional Rice Krispie treats, these are excellent for birthday parties, bake sales, or a school snack tucked away in a lunch box. These Fruity Pebbles Krispie Treats are going to be a huge hit!
Recipe Notes:
- I highly recommend using a 9 x 13-inch pan for the krispy treats, although you can use a smaller pan and do several batches.
- You can choose to make these small sandwiches or larger ones based on the size of the cookie cutter you choose.
How To Make This Fruity Pebbles Treats Recipe:
Ingredients:
5 cups of Fruity Pebbles cereal
10 oz bag of mini marshmallows
3 tablespoon butter
1 tub Betty Crocker Rainbow Chip
Directions:
Grease a large baking sheet with nonstick cooking spray or cover it in parchment paper or wax paper.
Place your marshmallows and butter in a large microwave-safe bowl.
Microwave the large bowl for 1-2 minutes or until the marshmallows get puffy. Stir the melted marshmallows and melted butter together to make sure they’re incorporated.
If you prefer to do this in a pot, break out a large pot and heat both ingredients over medium heat while stirring frequently with a wooden spoon or buttered spatula.
Once everything is melted, mix your Fruity Pebbles into the gooey marshmallow mixture.
Press your crispy treats firmly into the prepared pan in an even layer. You’ll want to do this with a flat potato masher or your hand to get the cereal mixture really packed down.
Alternatively, you can use a greased sandwich bag to cover your fingers instead. Spread a bit of butter on the outside of the bag, put your hand inside, and you have a great glove!
Freeze your Fruity Pebbles mixture in the large pan for 30 minutes.
Use a round cookie cutter to cut out as many circle cereal treats as you can.
Frost one circle with a good amount of your Rainbow Chip frosting and top the frosting with another circle. Voila! Fruity Pebble Treats Sandwiches!
Serve these with a glass of cold milk and some vanilla ice cream or all by themselves. Enjoy!
Store any leftovers of this delicious treat in an airtight container on the counter at room temperature or in the refrigerator for up to 2 days.
Should I Use Salted Or Unsalted Butter For These Sweet Treats?
For this specific recipe, it doesn’t matter which you use. Typically you would choose unsalted butter if the recipe has salt in the ingredients list and salted butter if it doesn’t.
For these Fruity Pebbles marshmallow treats, you won’t notice a difference in flavor one way or the other. Choose whatever is in your refrigerator.
I Can’t Find Rainbow Chip Frosting – What Should I Do?
You should be able to find Betty Crocker Rainbow Chip Frosting at almost any grocery store, but if you can’t find it near you, there is a substitute.
Grab a tub of white frosting and mix it with about two tablespoons of rainbow sprinkles. Use this combination for the center of the sandwiches and continue making your delicious recipe.
