Recipe Notes:
- You can use either Kellogg’s Rice Krispies or a generic brand of crispy rice cereal for the rice krispie mixture.
- To turn these into chocolate cereal bowls, use Cocoa Krispies instead of regular.
- The number of bowls that you end up with will depend on the size of the cookie cutter you use. If you use a standard cookie cutter, you should be able to get eight bowls. If you need a few more, use a slightly smaller cookie cutter or make a double batch.
How To Make Rice Krispie Treat Bowls
Ingredients:
6 cups Rice Krispies cereal
1 bag miniature marshmallows 15 oz
3 Tbsp butter, softened
1 bag milk chocolate candy melts
Rainbow sprinkles
Ice cream
Grease a 9 x 13” casserole dish with non-stick cooking spray. In a large microwave-safe bowl, heat the mini marshmallows and butter for 1 – 2 minutes until the melted marshmallows get puffy and the butter is melted. Keep an eye on it so that nothing burns.
*If you are not comfortable using a microwave for this step or don’t have access to one, you can put both ingredients into a large pot over medium-low heat and stir until the melted butter is completely combined with the gooey marshmallows.*
Remove your large bowl from the microwave and stir the Rice Krispie cereal into the melted marshmallow mixture.
Scoop the cereal treat mixture into your greased baking pan, pressing down firmly into an even layer with a greased potato masher or wooden spoon, and freeze for 15 minutes. Your goal with this is to help these cool down quickly so that you have hard Rice Krispie treats.
Lay down a piece of wax paper or parchment paper. Use your circle cookie cutter to cut out as many rice cereal circles as you can and lay them out on the paper. The number of cereal treats that you end up with depends on the size of the cookie cutters you choose.
Press your Rice Krispies circles flat but leave a little thickness. Mold the Rice Krispies in your hands to look like a bowl. It helps if you pinch the edges like a pie crust.
In a small microwave-safe bowl, heat 2 cups of candy melts on 50% power for 3 to 4 minutes, stirring every 30 seconds until melted.
Pour the melted chocolate into a pastry bag or Ziploc bag, cut the tip off and drizzle chocolate over the top edges.
Top them immediately with bright color sprinkles and place your chocolate Rice Krispies bowls in the freezer for 5 minutes.
Scoop ice cream in the center and top with more sprinkles. Serve immediately and enjoy!
If you will be using these in a few hours, they are fine to sit out at room temperature under plastic wrap for a bit. Otherwise, store them in an airtight container in the refrigerator for up to 3 days for best results.
What Can I Use If I Don’t Have Sprinkles For This Rice Krispie Treats Recipe?
The best part about this Rice Krispie Treat variation is that it’s super versatile! You can choose to make them with sprinkles or any other candy you have around the house or find at the grocery store.
Think extra marshmallows on top, crushed graham crackers, mini dark chocolate chips, crushed peanut butter cups or peanut butter chips, butterscotch chips, Fruity Pebbles, or Reese’s Pieces, to name a few. You could also make them slightly differently each time so that you’re always trying new flavors and new variations!
Why Are My Rice Crispy Treats Hard?
The main reason that your Crispy treat recipe would be hard and dry is that you didn’t add enough marshmallows.
The classic Rice Krispies treats recipe has a consistent ratio of cereal to marshmallows and butter (as listed in the ingredients above), so if you stray from that, you will likely find that your treats are hard and dry. Stick to the recipe and you shouldn’t have any problems.
