Piñata Cupcakes
Everyone loves a cupcake! There are all kinds of cupcake recipes out there, but I think that they’re even better when they are fun. What constitutes a fun cupcake you ask? Piñata cupcakes!
I made these cupcakes for my daughter’s birthday party (she helped!) and they were a total hit. Every single guest was wowed.
You can use all the same color sprinkles and Nerds or various kinds of colored candies. Do whatever you think will be the most fun for your guests. What’s better, my daughter had a complete blast watching each of her friends bite into their cupcakes! Birthday success!
These vegetarian cupcakes can be made for any occasion if you change the color of the filling. Green sprinkles for St. Patrick’s Day, blue or pink sprinkles at a gender reveal party, red and green for Christmas, red, white and blue for the 4th of July, Labor Day or Memorial Day – the options are endless! They really are a lot of fun!

Piñata Cupcakes Recipe
Ingredients:
12 cupcakes made with white cake mix
1 tub white frosting
1 jar rainbow sprinkles
1 box Rainbow Nerds candy
Bake your white cupcakes to the specifications on the box that you purchased. You will need a cupcake pan and likely water, eggs, and/or oil. You will want to finish with at least 12.
Once your cupcakes are finished baking, allow them to cool completely.
Use a knife to cut a small hole piece from the top of the cupcake and set it aside. Carefully scoop out the inside (so you aren’t breaking any of the sides or the bottom) of the cupcake with the knife or a teaspoon.
Fill about half of the cupcake hole with a layer of rainbow sprinkles
Fill the rest of the hole with a layer of rainbow Nerds.
Place the cut out circle back on top of the cupcake.
Frost the top of the cupcake with white frosting. This will cover the top that you’ve just cut out so that no one can tell. If you can still see any of the cut piece of cupcake, add some more frosting.
Top each cupcake with sprinkles and Nerds.
When you serve these, make sure that everyone has a plate in order to catch the candy that will pour out! Let the celebration begin!
