The best part about cooking zucchini is that even simple recipes can be absolutely delicious. That is the case with my Oven Roasted Parmesan Zucchini Bake. With thinly sliced zucchini rounds, a few seasonings, and parmesan cheese, you’re going to love it.
A great pairing with almost any main dish, I think this is one of the best zucchini recipes you’re going to find. It’s the perfect crowd pleaser for anyone watching their carb intake and other than slicing the zucchini, it’s easy enough that the children could help you make it. Plus, it’s pretty! Recipe Notes:
- I like to use a pie pan for this recipe because it makes a great presentation, but you can use an 8×8 or 9×9-inch Pyrex baking dish instead.
- If you don’t have access to large zucchini, you can use small or medium-sized zucchini, but you may want to add one or two additional for this recipe.
- You can use a cutting board and a sharp knife or a mandolin to slice your zucchini thinly. Thick slices will take longer to cook through, so keep them thin.
- If you don’t have access to cracked pepper you can substitute ground black pepper, but you may miss some of the spiciness, flavor, and aroma of the freshly ground option.
- You will want to use freshly shaved parmesan cheese from a block of cheese as opposed to shredded parmesan cheese. Shredded parmesan typically contains additives that keep it from clumping, but also won’t allow it to melt the same way.
- These parmesan zucchini rounds are perfect just the way they are, dipped in marinara sauce, or even a ranch-based sauce.
How To Make Oven Roasted Parmesan Zucchini
Oven Roasted Parmesan Zucchini Ingredients:
3 large zucchini, sliced thinly
3 tablespoons extra virgin olive oil
1 teaspoon sea salt
1 teaspoon freshly cracked pepper
1/4 cup parmesan, shaved
Supplies Needed:
Pie plate or 8×8-inch baking dish
Cutting board or vegetable mandolin
Large mixing bowl
Kitchen spoon or wooden spoon
Sharp knife or cheese shaver
Directions:
Step 1: Preheat the oven to 400 degrees F and take out a pie dish.
Step 2: Using a cutting board and a sharp knife or a vegetable mandolin slicer, slice your fresh zucchini into thin rounds.
Step 3: In a large bowl, add the sliced zucchini, olive oil, sea salt, and pepper. Mix everything well to evenly coat the zucchini.
Step 4: Place the zucchini mixture into your favorite Pyrex dish. You can pour it right in and spread the zucchini slices out or arrange them in a layered way that looks like dominos.
Note – They do not have to be in a single layer like you would place zucchini spears or zucchini chips on a baking sheet.
Step 5: Making sure you’ve got a hot oven, bake the zucchini for 20 minutes.
Step 6: Once the 20 minutes is up, sprinkle the shaved parmesan cheese onto the top of the zucchini.
Step 7: Bake for another 10-12 minutes or until the melted cheese has a slight golden brown.
Allow your oven-baked zucchini to cool for a couple of minutes so that you don’t burn your tongue and enjoy!
How To Store Leftover Oven Roasted Parmesan Zucchini Bake
Store any leftovers in the baking dish covered tightly with aluminum foil or in an airtight container in the refrigerator for up to 4 days.
Can I Make This Oven Baked Parmesan Zucchini Ahead Of Time And Reheat It Later?
I would not suggest it. If you bake your zucchini parmesan recipe ahead of time and heat it later, you have the potential for soggy zucchini.
How Do I Prevent The Zucchini From Being Soggy While Baking?
If you follow the basic steps of this recipe, you should have a softer zucchini but not soggy. If you are concerned about sogginess, use a few paper towels to wipe any dampness from the zucchini discs before adding them to the mixing bowl.
Can I Use Different Types Of Cheese Besides Parmesan For This Recipe?
Yes! The best way to substitute parmesan cheese would be with shaved asiago cheese, pecorino cheese, or mozzarella cheese.
