Crispy Asparagus
Getting vegetables into your diet can sometimes be a challenge, regardless of the recipe. That’s why this easy baked asparagus recipe is about to become a new favorite! Even for the pickier eaters, these are absolutely amazing and you will not be able to stop eating them! A good problem to have! Make this along with my Bacon Wrapped Pork Chops to turn this into a complete meal!
Crispy Asparagus Recipe
Ingredients:
3 egg whites
1 cup breadcrumbs or panko
1/2 cup all-purpose flour
1/2 cup shredded Parmesan cheese
1 Tbsp Old Bay seasoning
1 Tbsp flat leaf parsley, chopped
salt and pepper to taste
Set your oven to 375 degrees and then cut and clean your asparagus. Line a baking sheet with parchment paper and set it aside.
In a medium sized bowl, whisk together the egg whites and flour.
In a second bowl, combine the breadcrumbs, Old Bay Seasoning, parsley, and shredded Parmesan cheese. You will want each bowl to be large enough to fit the asparagus.
Dip and thoroughly coat each asparagus spear in the egg and flour mixture, then move it to the next bowl and thoroughly coat the now wet asparagus spear it in the breadcrumbs mixture.
Arrange the asparagus on the parchment lined baking sheet and bake for 15 to 20 minutes. You’ll know they are ready when they look brown and crispy. Serve immediately.
