With a crispy coating that includes parmesan cheese, this delicious asparagus is the best way to weed out some of the sides you may be tired of. It’s a healthy alternative to french fries and will easily pair with your favorite main dish.
Even if you’re not a fan of asparagus, you’re going to enjoy these! An easy dinner side that takes a total time of less than 45 minutes, this is one of those healthy recipes you’ll find yourself making regularly.
Recipe Notes:
- If you are using thicker asparagus, err on keeping them in the oven for the full 20 minutes. If you are using thinner asparagus, check them after 15 or 16 minutes.
- Make sure to allow the excess egg mixture to drip off or the panko mixture will not stick to the whole asparagus stalk.
- If you use lemon slices to drip some fresh lemon juice on top of the cooked asparagus, it’s fantastic! You could also add some lemon zest at the last minute.
How To Make Crispy Baked Asparagus Fries Recipe
Crispy Baked Parmesan Asparagus Fries Ingredients:
1 lb fresh asparagus spears
3 egg whites
1/2 cup all-purpose flour
1 cup breadcrumbs or panko breadcrumbs
1 tablespoon Old Bay seasoning
1 tablespoon flat-leaf parsley, chopped
1/2 cup shredded Parmesan cheese
Kosher salt and black pepper to taste
Supplies Needed:
Rimmed cookie sheet
Parchment paper or aluminum foil
Cutting board
Sharp knife
Paper towels
2 medium bowls
Directions:
Step 1: Heat oven to 375 degrees and line a sheet pan with parchment paper or aluminum foil. If you don’t have either of those handy, spray your pan well with cooking spray.
Step 2: Wash your bunch of asparagus and cut off the woody ends. Lay them out on a paper towel and pat dry to remove any excess moisture.
Step 3: In a medium-sized bowl, whisk together the egg whites and flour.
Step 4: In a second bowl, combine panko or bread crumbs, Old Bay Seasoning, parsley, and shredded Parmesan cheese. You will want each bowl to be large enough to fit the asparagus.
Step 5: Dip and thoroughly coat each of the fresh asparagus stalks in the beaten egg mixture and let the excess drip off.
Step 6: Move it to the next bowl and thoroughly coat the now wet asparagus spear in the panko parmesan mixture.
Step 7: Arrange the coated asparagus in a single layer on the prepared baking sheet. Top with some salt and pepper to your personal preference.
Step 8: Bake asparagus for 15-20 minutes on the middle oven rack. You’ll know they are ready when they look golden brown and crispy.
Step 9: Allow them to cool on a wire rack or serve immediately for best results and enjoy!

Store any leftover parmesan baked asparagus in an airtight container or a plastic bag in the refrigerator for up to 3 days.
What Dipping Sauce Can I Serve With This Parmesan Asparagus Recipe?
If you want to dip this breaded asparagus, go for your favorite sauce. Ranch dressing, garlic aioli, or another creamy variety would be my suggestion. Serve it in a shallow dish on a plate next to your asparagus and serve!
Can I Add Garlic To This Asparagus Recipe?

I don’t know what I did wrong, but this recipe was a major fail for me. The egg mixture just turned to a paste and then made the bread crumbs gum up and stop sticking to the asparagus before I was even halfway through. I’ve had more success in the past with an egg mixture and flour separate–you dip egg, then flour, then egg again, then bread crumbs. I should’ve done that this time.
I’m so sorry they didn’t work out for you! Sometimes if there is too much egg mixture on the asparagus it can make the breadcrumbs slide off. :/
