Apple Polenta Gorgonzola Bites
If you are looking for an easy appetizer with a twist, these Apple Polenta Gorgonzola Bites are going to be perfect! They are inexpensive to make for a group and anyone can prepare them. Apple Polenta Gorgonzola Bites Recipe
Ingredients:
1 tube pre-made polenta 24 oz
2 Granny Smith apples
1 container crumbled gorgonzola cheese 4 oz
Chill the tube of polenta for about 30 minutes. Take the tube out of the fridge and slice it into approximately 1/4-inch wheels. Be careful not to make the slices too thin or they will be flimsy and crumble in half.
Place the wheels on a baking sheet or cutting board with a bit of space in between each. You should have approximately 24 wheels.
Cut your Granny Smith apples in half and remove the seed area as well as the stem area at the top and bottom of the apple. Cut the apple halves into thin slices (approximately 48 total) and layer two slices on top of each polenta wheel. Top the apples with a pinch of gorgonzola.
Cover the tray with plastic wrap and store in the fridge until ready to serve. You will want to serve these the same day for maximum freshness.
