Banana Cheesecake Bars
If you love banana bread and classic cheesecake flavors, I have the perfect dessert to try. These easy Cheesecake Frosted Banana Bars are a decadent dessert that you can make any time of the year!
When I was little, one of my favorite desserts that we ever had was the Sara Lee banana cake. I remember it being the most amazing treat. It beat every other sweet that we purchased and I would get super excited on the rare occasions where it came home with us.
Now we can make our own twist on banana cakes! This moist dish has a creamy texture and a rich cream cheese frosting on top of banana cake bars. And although it might look intimidating, it’s an easy dessert to make and it won’t take you a long time.
This banana dessert is always vegetarian and full of fruit flavor. Delicious banana cream cheesecake bars that will work as Mother’s Day desserts, for potlucks, as a birthday dessert, or as homemade desserts for after your weeknight dinners. With a delicious banana flavor, the only thing you’ll have trouble with is making sure you get a piece before they’re gone!
Banana Bars Recipe
How To Make:
Ingredients:
1 box banana cake mix
1 stick salted butter, softened
3 large eggs, separated
3 fresh bananas, sliced
8 oz cream cheese, softened
1 teaspoon vanilla extract
2 cups powdered sugar
Caramel ice cream topping
Chopped walnuts
Directions:
Preheat your oven to 325 degrees and grease a 13 x 9-inch baking pan with nonstick cooking spray. If you don’t have access to spray, you can line the baking pan with parchment paper or aluminum foil instead. Set it aside.
Take out a cutting board and a sharp knife. Cut your banana coins into approximately 1/2-inch slices.
In a large mixing bowl, add your cake mix, softened butter, and 1 egg. Mix the combination by hand until a stiff dough forms.
Press the cake mixture evenly into an even layer in the prepared pan with your fingers. Layer the sliced bananas on top of your dough.
In the same large bowl you just used, cream 2 eggs, cream cheese, and vanilla with an electric mixer on low speed until it is light and fluffy.
Add in your powdered sugar, 1 cup at a time, and combine until everything appears mixed together, being sure to scrape the sides of the bowl with a rubber spatula.
Spoon the cream cheese mixture over your banana slices in the pan and bake for 40-45 minutes or until the edges of the cheesecake mixture begin to golden.
Allow the full banana cream cheese cake to cool completely to room temperature on a wire rack or a cookie sheet before cutting.
Top your full cheesecake layer with caramel topping and walnuts and then slice the cream cheese banana bars into portions. These can be as large or small as you like – your choice. Enjoy!
If you prefer to cut your banana cake-like bars before adding your caramel sauce and walnuts, that is fine too. Just put each banana bar on a plate, add your syrup and walnuts then and serve.
These are excellent with whipped cream and a scoop of vanilla ice cream or all by themselves.
Store any leftovers in an airtight container in the refrigerator or the baking dish covered tightly in plastic wrap for up to 3 days.
Can I Use Overripe Bananas For This Easy Recipe?
Maybe. It is always a good choice to use ripe bananas to go beneath the cheesecake filling because you want to make sure that you are getting all of the banana flavor and perfect texture available.
That said, if your overripe bananas don’t have many bruises, you can use them too. If they are brown bananas, you’re best off getting a fresh bunch for this recipe and using those for banana bread.
Can I Omit The Walnuts For Allergy Reasons?Â
Yes! If you have a nut or tree nut allergy in the home, it is easy for you to omit the walnuts. The most important ingredients are contained in the creamy cheesecake bars themselves, so it’s no problem.
To keep the little bit of the crunch that the walnuts add, consider adding some chocolate chips or nut-free granola on top.
