If you are looking for an easy and festive dessert, you’re going to love my Funfetti Cake Mix Cookies. With a few simple ingredients, these are the perfect cookies for all types of celebrations. 

I am a huge fan of cake mix cookies. There is less measuring and fewer ingredients, so there are a few simple steps and you can get them right into the oven. 

These chewy funfetti cookies are soft and rich with some crunch from the ball sprinkles. I have a particular fondness for that crunch, so I like to add as many ball sprinkles as I can. 

If you are serving these for birthday parties, a baby shower, or during the holiday season, consider pouring out glasses of milk and lining the top with sprinkles. They’re so much fun, they only take a little time, and they look really cool. 

With a box of cake mix, some rainbow sprinkles, and a short bake time, these birthday cake cookies will be some of the easiest cookies you’ve made. Perfect for little bakers to help with!

Recipe Notes:

  • There is no need to use an electric mixer for this simple recipe – a kitchen spoon or spatula will be enough. 
  • You can use any brand of box cake mix as your main ingredient, so go with your favorite or what you see at the grocery store.

How To Make Funfetti Cake Mix Cookies

Easy Funfetti Cookies Recipe Ingredients:

1 box white cake mix
2 large eggs
1/3 cup vegetable oil
1 tablespoon vanilla extract
1 teaspoon baking powder
6 tablespoons long colorful sprinkles
1 cup chocolate chips 
6 tablespoons little colorful ball sprinkles

Supplies Needed:

Large cookie sheets
Parchment paper or nonstick cooking spray
Small bowl
Large mixing bowl
Wooden spoon or rubber spatula
Medium ice cream scoop or tablespoon
Large glass

Directions:

Step 1: Preheat your oven to 350 degrees and place a piece of parchment paper onto a large baking sheet. Place your ball sprinkles into a small bowl and set them aside. 

Step 2: In a large bowl, combine your dry cake mix, eggs, oil, vanilla, baking powder, and long rainbow sprinkles. Mix the cake batter cookie dough with an electric mixer.

Step 5: Dip the top of each of your cookie dough balls into the ball sprinkles that you set aside earlier.

Step 8: Right when you take them out from the oven, use a large glass and press the cookie down gently to help them flatten the rest of the way. 

Allow your hot and chewy cookies to cool on a cooling rack and enjoy!

How To Store Leftover Funfetti Cake Mix Cookies

Store any leftovers in an airtight container or on a plate wrapped tightly in plastic wrap or cling wrap at room temperature for up to a week for best results. 

How To Freeze Funfetti Cake Mix Cookies

If you want to keep these homemade cookies for longer, a great way to do that is by freezing them!

After removing the baked cookies from the oven, allow them to cool completely on the cookie sheet. Once cool, move the baking sheet to the freezer to flash freeze the cookies for about 2 hours. 

Move your frozen cookies into a freezer bag or freezer-safe container and keep them in the freezer for up to 3 months.

How Do I Make A Glass Of Milk With Sprinkles?

To line a glass with extra sprinkles, pour some ball sprinkles on a plate. You do need something to make the “glue” in order to hold the sprinkles onto the glass, so I like to use honey. It is sticky, edible, and will adhere to the rim of the glass. 

Use a spoon to add a bit of honey around the rim of a glass. Once it is coated, dip the top of the glass into the ball sprinkles you’ve poured onto the plate.

Make sure that you get a bunch of sprinkles sticking to the rim and lift it back up. Do this for as many glasses as you have. Serve each of the confetti cookies with a glass of milk and enjoy!

Can I Use A Box Of Funfetti Cake Mix For These Colorful Cookies?

Yes! You can make these Funfetti Cake Cookies with a variety of different cake mixes.

I choose to use white box mix because I like to keep the colors separate until baking, but you can use boxed cake mix in the confetti, funfetti, white, or yellow varieties. The flavor of cake mix is up to you – they will all work.

For these cookies, it is always a good idea to use whatever chips you like the most.

Total Time 30 minutes

Ingredients

  • 1 box white cake mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 tablespoon vanilla
  • 1 teaspoon baking powder
  • 6 tablespoons long colorful sprinkles
  • 1 cup chocolate chips
  • 6 tablespoons little colorful ball sprinkles

Instructions

  1. Preheat your oven to 350 degrees and place a piece of parchment paper onto a large baking sheet.
  2. Place your ball sprinkles into a small bowl and set them aside. 
  3. In a large mixing bowl, combine your cake mix, eggs, oil, vanilla, baking powder, and long sprinkles. Mix them together with a hand mixer.
  4. Add in your chocolate chips and fold them into your batter with a spatula. You don’t want to incorporate these in with the mixer so that you don’t break up the chocolate too much. 
  5. Using a tablespoon, scoop out your dough and roll it into a ball. Dip the top of each of your dough balls into the ball sprinkles that you set aside earlier.
  6. Place each of the cookie balls onto the parchment paper lined baking sheet, with the ball sprinkles facing up. 
  7. Bake your cookies for 10 minutes. Right when you take them out from the oven, use a large glass and press the cookie down gently to help them flatten the rest of the way. 
  8. Allow them to cool and enjoy!
