Apple Polenta Gorgonzola Bites

A great way to get people standing around and talking, once you take these apple polenta bites out of the refrigerator, you can leave them out the whole time. They will be fine at room temperature for several hours.

How To Make Polenta Bites Recipe
Polenta Bites With Apple And Gorgonzola Ingredients:
1 tube pre-made polenta 24 oz
2 Granny Smith apples
1 container crumbled gorgonzola cheese 4 oz
Supplies Needed:
Cutting board
Sharp knife
Plastic wrap
Baking sheet or serving platter
Directions:
Chill the tube of polenta for about 30 minutes.
Take the tube out of the fridge and slice it into approximately 1/4-inch wheels. Be careful not to make the slices too thin or they will be flimsy and crumble in half.
Place the thick rounds of polenta on a baking tray or chopping board with a bit of space in between each. If you’d prefer to work on a countertop, line it with parchment paper before starting.
You should have approximately 24 wheels of polenta total, so you may need two areas to place your polenta bites.
Cut your Granny Smith apples in half and remove the seed section as well as the stem area at the top and bottom of the apple. If you have an apple corer, that should remove everything cleanly.
Using a sharp knife, cut the apple halves into thin slices (approximately 48 total) and layer two slices on top of each polenta wheel, a little bit stacked, but side-by-side from each other.
Top the apples with a pinch of gorgonzola. Try to make them an even layer or the crumbles may fall off.
Cover the tray with plastic wrap and store it in the fridge until ready to serve. You will want to serve these the same day for maximum freshness, but you can eat them the next day as leftovers.
Can I Use A Different Cheese For These Apple Gorgonzola Polenta Bites?
Yes! If you aren’t a fan of gorgonzola cheese, you can easily replace it with blue cheese crumbles or small bits of goat cheese.
In a pinch, you could also use shredded parmesan cheese on each apple piece. Any of these will work beautifully with these tart and savory bites.
