When it comes to campfire recipes, there are lots of basics out there. There are homemade pizza recipes that are tasty and filling – but there are also new ways of doing things. If you haven’t had Grilled Mexican Pizza with Chorizo, it’s about time to change that!
This Mexican Pizza is an excellent camping recipe if you want something a little different. You don’t have to make your own pizza dough and these are really fast pizzas to make, so it’s a great way to feed everyone quickly.
While this simple recipe does have chorizo, this is one of those grilling recipes that can easily be made vegetarian. Omit the chorizo from any pizza and you have a very easy vegetarian pizza. If you’d like to make it vegan, omit the chorizo and swap out the regular cheese for vegan cheese. Voila!

Mexican Pizza On The Grill
Ingredients:
2 large pita bread or thick flour tortillas (your choice)
1 avocado
1 tomato
1/3 lb chorizo meat
1/2 cup Mexican blend shredded cheese
1/2 small onion or bunch of green onions
fresh cilantro (to taste)
jalapeno (optional)
fresh lime juice (optional)
Wash the tomato, jalapeno, and cilantro (it doesn’t matter if it’s warm water – any water will do). Take out a cutting board and chop each into bite-sized pieces. Set them aside.
Peel the onion and chop that as well. Set the pieces aside with the other items.
Light your grill and have a pan sitting on top that is durable enough to handle the heat (like a cast iron pan or large skillet). Once the grill and pan are heated up, add your chorizo meat to the pan and cook it thoroughly. Set it aside in the pan to keep it warm.
Take your pita bread/tortillas and lay them directly on the grill grates. This is your pizza crust.
Watch carefully as these will char and cook quickly, so you’ll need to be ready to flip and pull fast if it gets too hot. You’re just wanting slight color and grill marks on the crust, so it will happen fast.
Once your crispy tortilla or pita is ready, pull it off and place it on a plate, sheet pan, pizza pan, or parchment paper on a flat surface.
Now it’s time to assemble your large pizza. Cut the avocado in half and use each half to spread a nice thick layer onto the two pitas/tortillas. This is your “pizza sauce.”
Now start laying on your toppings. Add the cheese, the chopped tomatoes, and the onions, plus the optional jalapenos and as much cilantro as you like.
Lastly, add on your chorizo. Squeeze some fresh lime juice over the top of the pizza.
Cut your finished pizza into slices and enjoy!

Yes! Just as with any recipe, you can change it up to meet your needs. If you are camping, it may be challenging to add new things, but if you are at home on the grill, there are more options. You can add ground beef or chicken breast, add a layer of refried beans, add some red enchilada sauce or salsa verde, or top your pizza with chili powder, black olives, or sour cream. There are tons of options.
