This Mexican pizza is an excellent camping recipe if you want a fresh treat. You don’t have to make your own pizza dough and these are really fast pizzas to make, so it’s a great way to feed everyone quickly.
With recipe ingredients that you can find at most grocery stores and instructions that can be used on a charcoal grill or a gas grill, this fun twist on a traditional Mexican pizza is going to be a huge hit.
If camping isn’t in your immediate future, you can home cook this tasty dish. Using your favorite taco ingredients from the kitchen, this is one of those easy recipes that no one will see coming. Made on the grill, this is Mexican food that will have an extra smoky flavor. A great idea for those new to grilling as well!

How To Make Mexican Pizza On The Grill
Ingredients:
2 large pita bread or thick flour tortillas (your choice)
1 large avocado
1 large tomato
1/3 lb chorizo sausage meat
1/2 cup Mexican blend shredded cheese
1/2 small onion or bunch of green onions
fresh cilantro (to taste)
jalapeno (optional)
fresh lime juice (optional)
Direction:
Wash the fresh tomato, jalapeno, and cilantro (it doesn’t matter if it’s warm water – any water will do). Take out a cutting board and chop each into bite-sized pieces. Set them aside.
Peel the onion and chop that as well. Set the pieces aside with the other items.
Light your grill so that you are managing medium heat or medium-high heat at the most. Have a pan sitting on top of the outdoor grill that is durable enough to handle the heat (like a cast iron skillet).
Once the grill and pan are heated up, add your chorizo meat to the large skillet and cook it thoroughly. Set it aside in the pan to keep it warm.
Take your pita bread/tortillas and lay them directly on the grill grates. This is your pizza crust.
Watch carefully as the bottom of the crust will char and cook quickly, so you’ll need to be ready to flip and pull fast if it gets too hot. You’re just wanting a light golden brown and grill marks on the crust, so it will happen fast.
Once your crispy tortilla or pita is ready, pull it off and place it on a large plate, rimless baking sheet, pizza pan, or parchment paper on a flat work surface.
Now it’s time to assemble your large pizza. Cut the avocado in half and use each half to spread a nice thick layer onto each crispy crust. This is your “pizza sauce.”
Now start laying the rest of the toppings on the top of the pizzas. Add the cheese, the chopped tomatoes, and the onions, plus the optional jalapenos and as much cilantro as you like.
Lastly, add on your cooked chorizo. Squeeze some fresh lime juice over the top of the pizza.
Cut your grilled pizza into slices and enjoy! It will be fine at room temperature if you are eating slowly.
Store any leftovers in an airtight container or wrapped tightly in plastic wrap in a refrigerator or a cooler for up to 3 days.
What Kind Of Chorizo Should I Use?
You can use any type of chorizo you’d like for this easy meal. Pork chorizo, beef chorizo, or chicken chorizo are great options. If you’d like to make this a vegetarian pizza, choose soy chorizo. It is all about keeping the flavors and spice, not necessarily the meat itself.
Are There Other Ingredients I Can Use For This Mexican Pizza Recipe?
Yes! Just as with any recipe, you can change it up to meet your needs. If you are camping, it may be challenging to add new things, but if you are at home on the grill, there are more options.
