Homemade Hot Pockets

My kids have always been a fan of grocery store Hot Pockets, so I thought it was time to try to make my own. With just a little bit of time, you can make these easy Homemade Pizza Pockets too! 

Perfect for kids’ lunches, dinners, or as an after-school snack, this is a tasty finger food that will easily become one of your family favorites. Not only is this an easy homemade version of your store-bought favorites, but it’s made with simple pizza dough, tomato sauce, and small pieces of whatever toppings you like!

Get the entire family involved in making this meal. Put together your favorite pizza toppings and allow everyone to assemble their own pockets. It is the best part about this homemade version! When they’re done, everyone can show off their edible creation. 

The easiest way to make these is with store-bought ingredients (biscuits in a tube, a jar of pasta sauce, shredded cheese, etc.), but you can change things up to use recipes you may already have available. If you’ve recently made a homemade pizza sauce or your own pizza dough, this is a great way to stretch them into another meal. 

This is one of those easy recipes that you can tailor to your family’s dietary needs as well. You can easily keep them vegetarian pizza pockets or allow for ground beef, rotisserie chicken, or pepperoni pizza pockets – your choice.

The only thing that may be a little tricky is closing the biscuit dough, so be ready to help your children with their homemade calzones as needed.

Recipe Notes:

  • Going into this recipe, your ingredients will vary, so please keep that in mind! The more ingredients you add, the less sauce and cheese you will want to add so that the pockets don’t leak gooey cheese everywhere.
  • You can choose to use an egg wash instead of the melted butter on the hot pocket dough before placing your easy pizza pockets in the oven. 
  • If you allow your picky eaters to choose their own simple ingredients, they will enjoy them more than frozen hot pockets!

How To Make Pizza Pocket Recipe

Homemade Pizza Pockets Ingredients:

1 tube jumbo refrigerator biscuits (typically has 8 or 10)
1/2 cup pizza sauce (approximately)
3/4 cup mozzarella cheese (approximately)
favorite pizza toppings (pepperoni slices, green peppers, fresh basil) (optional)
2 tablespoons melted butter (optional)
pinch of oregano or Italian seasoning (optional)

Supplies Needed:

Baking sheet
Parchment paper
Fork

Directions:

Step 1: Preheat your oven to 350 degrees. Line a baking sheet with parchment paper (or line individual plates if everyone needs their own work surface).

Use the palm of your hand or a rolling pin to flatten each biscuit until it has about doubled in size.

Step 4 (optional): If you want, melt two tablespoons of butter in a small bowl and add a pinch of oregano. Using a pastry brush, brush the butter onto the top of the dough of each of the cheese pockets. This is not a necessity and I only do it if I have time.

This recipe will make 8-10 pockets depending on how many biscuits are in your tube.

How To Store Leftover Homemade Pizza Pockets

Store any leftover hot pockets in an airtight container or on a plate covered with plastic wrap for up to 3 days.

Can I Use Anything Else To Make The Perfect Pizza Pocket Crust? 

Yes! I find biscuits to be the easiest option because they only take a matter of minutes to prepare, but there are other options. You can use homemade pizza dough if you have a favorite recipe or crescent dinner rolls.

The challenge with crescent dough is that it is thinner and has small holes where you are supposed to separate them. If you use them as squares and press the holes between them together (yielding a total of four pockets per tube), it should work well enough.

Can You Freeze Homemade Pizza Pockets?

Yes! After you have baked your pockets, allow them to cool to room temperature. At that point, place them in a freezer bag and store them in the freezer for up to 3 months. This is the best snack to heat up when you have a hankering for pizza!

Ingredients

  • 1 tube jumbo refrigerator biscuits (typically has 8 or 10)
  • 1/2 cup pizza sauce (approximately)
  • 3/4 cup mozzarella cheese (approximately)
  • toppings of your choice (pepperoni, mushrooms, fresh basil, anything else)
  • 2 Tbsp melted butter (optional)
  • pinch of oregano (optional

Instructions

  1. Preheat your oven to 350 degrees.
  2. On a parchment lined baking sheet, use the palm of your hand to flatten each biscuit until it has about doubled in size.
  3. Spoon pizza sauce onto half of the biscuit, top with your favorite toppings and cover with cheese.
  4. Fold the empty side over the ingredients and seal the edges, pressing them together with the tines of a fork.
  5. If you want, melt two tablespoons of butter and add a pinch of oregano. Brush the butter onto each of the cheese pockets.
  6. Bake for 10-12 minutes or until puffy and golden brown.
  7. Makes 8-10 depending on how many biscuits are in your tube.

  1. ANy tips for sealing them, but not making a large dough area? Seems it takes so much of the dough to seal them than I have to eat through so much dough, before I get to the filling.

    1. My best tip is to stretch the dough out as much as you can before placing the fillings inside. If they stay in the tight round form, it does make it trickier.

  2. I see the dough in the photo has what looks like some herbs on it, do you have a simple spread to brush on the pizza pockets?

    1. For the photos I took a little melted butter, added a little oregano and brushed it on. When I make it with my family, I don’t usually do that, but they taste great both ways!
