While I’m not sure that you can say these are healthy desserts, they aren’t all that unhealthy either. With simple ingredients that can be found at any grocery store, these easy treats aren’t something you need to feel guilty about eating.
Perfect for blueberry season or after you’ve been blueberry picking, this is a fantastic summer dessert that you can serve in bar form. Easy to slice and distribute, it’s a great dessert for summer parties or potlucks.
This recipe is slightly different from your typical blueberry crumble recipe in that you don’t need lemon juice or corn starch. You will get all of the thickening that you need from the pie filling instead.
If you are looking to turn these into gluten-free blueberry crumble bars, you can substitute almond flour for all-purpose flour. Otherwise, this is a naturally vegetarian dessert that is also egg-free and nut-free, so it’s a great option for lots of dietary restrictions.
Blueberry Crumble Bars Recipe
How To Make:
Ingredients:
1 can blueberry pie filling, 26 oz
1 pint blueberries, fresh
1 1/2 cups all purpose flour
1 1/2 cups old-fashioned oats
3/4 cup sugar, divided
2 tsp cinnamon
1/2 tsp baking soda
3/4 cup butter, cold
2 Tbsp brown sugar
Directions:
Preheat your oven to 375 degrees. Grease a 9 x 13 baking dish with nonstick cooking spray and set it aside.
Wash your fresh berries and place them in a medium bowl. Add 1/4 cup of your sugar to the fresh berries. Mix them together and allow them to sit for 10 minutes.

Cut in your cold butter so that it looks like coarse crumbs (somewhere around the size of small peas). When it all adheres together during baking, these will form your crumbles.



Sprinkle the very top of everything with brown sugar, making sure to get a bit of sugar all over. Bake for 25 minutes or until the top is brown and the sides are bubbling.


Store any leftovers in the baking pan under plastic wrap or aluminum foil or in an airtight container in the refrigerator for up to a week.
