Recipe Notes:

  • If you would prefer to make this decadent treat in a square pan so that you have sharp edges on every cookie, you can. You’ll need two 8×8-inch metal pans. 
  • You can use a hand mixer to combine your cake mix cookie dough, but you shouldn’t need to. 
  • Serve these alone or with a scoop of vanilla ice cream on top and a cold glass of milk!

How To Make Chocolate Chip Caramel Cookie Bars

Chocolate Chip Caramel Cookie Bars Ingredients:

1 box yellow cake mix
2 large eggs
1/4 cup butter, melted
1 bag semi-sweet chocolate chips 12 oz
7 tablespoons caramel topping, divided

Supplies Needed:

9×13-inch baking dish
Nonstick spray
Large mixing bowl
Kitchen spoon or wooden spoon
Sharp knife

Directions:

Step 1: Preheat your oven to 350 degrees and use nonstick cooking spray to grease a 9 x 13-inch casserole dish. You can line it with parchment paper, but you shouldn’t need to. 

Step 2: In a large bowl, combine the melted butter, eggs, and box of cake mix. Stir until everything is well combined.

How To Store Leftover Chocolate Chip Caramel Cookie Bars

Store any chewy chocolate chip cookie bar leftovers on a plate covered with aluminum foil or plastic wrap or in an airtight container in the refrigerator for up to 5 days. 

Can I Use Different Chips In These Chocolate Chip Cake Mix Cookie Bars?

Yes! I like to use semisweet chocolate chips for this easy recipe, but you can mix it up. Try white chocolate chips, dark chocolate chips, milk chocolate chips, or even peanut butter chips or butterscotch chips.

You can also use a combination of semi-sweet chips and something else. Do one the first time and something else the next time.

Can I Make Homemade Caramel Sauce Instead Of Buying It From The Grocery Store? 

Yes! If you pick up a bag of Kraft caramels (or the like), you can use them to make your own sauce for these gooey cake bars. 

Unwrap 18 chewy caramels and place them in a microwave-safe bowl. You can cut them into small pieces if you want the process to go a little bit faster. 

Add 1 tablespoon of milk to the microwavable bowl. Microwave the two simple ingredients in 1-minute intervals, stirring the mixture in between each minute. 

If you need to store any excess caramel, keep it in the refrigerator knowing that you will have to microwave it again before future use.

Can I Use Different Cake Mixes For These Cake Mix Bars?

Yes! This delicious dessert calls for a yellow boxed cake mix, but you can alter it by choosing a chocolate cake mix (which will make the recipe very chocolatey) or a white cake mix.

If the only boxes of dry cake mix you have access to don’t include yellow, the white will be the most similar to the above recipe.  

Can I Turn These Into Salted Caramel Chocolate Chip Cookie Bars? 

Yes! During the last step where you are drizzling caramel sauce onto the cookie bars, sprinkle some flaked sea salt on top of the caramel. This will give you an additional salty flavor by creating a salted caramel sauce.

You can mix the salt into the caramel in a small bowl and then drizzle it, but it is much easier to sprinkle it on.

Ingredients

  • 1 box yellow cake mix
  • 2 large eggs
  • 1/4 cup butter, melted
  • 1 bag chocolate chips 12 oz
  • 7 Tbsp caramel topping, divided

Instructions

  1. Preheat oven to 350 degrees and use non-stick cooking spray to spray a 9x13 casserole dish.
  2. In a medium-sized mixing bowl, combine the melted butter, eggs, and cake mix. Stir with a wooden spoon until everything is combined.
  3. Once everything is incorporated, add in the chocolate chips and 4 tablespoons of caramel topping. Stir everything well and then pour the mixture into the casserole dish.
  4. Bake for about 20 - 25 minutes or until it is golden brown on the sides. Drizzle the remaining caramel topping immediately after removing the pan from the oven so that it can melt into the bars.
  5. Allow the bars to cool before cutting. Serve alone or with ice cream on top!
