Cake Mix Cookie Recipe
Ingredients:
1 box yellow cake mix
2 eggs
1/2 stick of butter, melted
1 bag semi-sweet chocolate chips 12 oz
7 Tbsp caramel topping, divided
Preheat your oven to 350 degrees and use nonstick cooking spray to grease a 9 x 13-inch casserole dish. You can line it with parchment paper, but you shouldn’t need to.
In a large bowl, combine the melted butter, eggs, and box of cake mix. Stir with a wooden spoon until everything is combined.
Once everything is incorporated, add the bag of chocolate chips and 4 tablespoons of thick caramel sauce to the mixing bowl.
Stir well and then pour the chocolate chip cookie dough caramel mixture into the prepared pan in a single layer. Scrape any remaining cookie dough out of the mixing bowl with a rubber spatula.
Bake for about 20 – 25 minutes or until it is a light golden brown on the sides of the pan.
Drizzle the remaining gooey caramel over the entire top immediately after removing the pan from the oven so that it can melt into the dessert bars.
Allow the chewy cookie bars to cool to room temperature in the baking dish or on a wire rack before cutting, making sure the caramel layer has had time to seep in. Serve alone or with a scoop of vanilla ice cream on top and a tall glass of milk!
Store any chewy chocolate chip cookie bar leftovers on a plate covered with aluminum foil or plastic wrap or in an airtight container in the refrigerator for up to 5 days.
Can I Use Different Chips In These Chocolate Chip Cake Mix Cookie Bars?
Yes! I like to use semisweet chocolate chips for this recipe, but you can mix it up. Try white chocolate chips, dark chocolate chips, milk chocolate chips, or even peanut butter chips or butterscotch chips. Do one the first time and something else the next time.
Can I Use Different Cake Mixes For These Cake Mix Bars?
Yes! This delicious dessert calls for yellow boxed cake mix, but you can alter it by choosing a chocolate cake mix (which will make the recipe very chocolatey) or a white cake mix. If the only boxes of cake mix you have access to don’t include yellow, the white will be the most similar to the above recipe.
Can I Turn These Into Salted Caramel Chocolate Chip Cookie Bars?
Yes! During the last step where you are drizzling caramel sauce onto the cookie bars, sprinkle some flaked sea salt on top of the caramel.
