Cheeseburger Soup
This Cheeseburger Soup is perfect for a cold day! Add a little bacon, top it with cheese, green onions or anything else that you’d like and you can change it up each and every time you cook it!
The best part about this soup – other than how creamy and delicious it is – is that you can set all of the ingredients in your slow cooker and you’ll have dinner ready when you get home. You can’t beat that!
A hearty meal all by itself, pair it with some bread on the side and you’re ready for dinner! If you’re looking to make this a vegetarian option, use vegetable broth instead of chicken broth, veggie crumbles in place of the ground beef and either omit the bacon or use veggie bacon. Voila!

Cheeseburger Soup Recipe
Ingredients:
1 lb ground beef
3/4 cup onion, chopped
1 tsp dried parsley
4 cups potatoes, peeled and cubed
4 cups chicken broth
1/4 cup flour
16 oz Velveeta cheese, cubed
1 1/2 cups milk
1 tsp salt
1 tsp pepper
1/4 cup sour cream
5 strips bacon, cooked
Take out a 6-quart crockpot and set aside. In a large skillet, cook your ground beef and drain the fat. Place your ground beef in the crockpot.
Add the onion, parsley, potatoes, chicken broth, flour, Velveeta, milk, salt, pepper and sour cream to the crockpot. Cook on low for 5-6 hours. Soups tend to taste better the longer you cook them, so air on the side of 6 hours if you can.
When you are near ready to serve your soup, cook five (or more) pieces of bacon in a skillet, oven or microwave (whatever your favorite method). Crumble or cut up your bacon, reserving a little bit to put on top of each bowl of soup.
Place the rest into the crockpot and stir. Garnish with the reserved bacon, some cheese and/or green onions and serve.
