This Cheeseburger Soup is perfect for a cold day! Add a little bacon, top it with cheese, green onions or anything else that you’d like and you can change it up each and every time you cook it! Set all of the ingredients in your slow cooker and you’ll have dinner ready when you get home. You can’t beat that! Pair these with some Chocolate Peanut Butter Bugles for desert for something extra tasty.
Cheeseburger Soup Recipe
1 lb ground beef
3/4 cup onion, chopped
1 tsp dried parsley
4 cups potatoes, peeled and cubed
4 cups chicken broth
1/4 cup flour
16 oz Velveeta cheese, cubed
1 1/2 cups milk
1 tsp salt
1 tsp pepper
1/4 cup sour cream
5 strips bacon, cooked (optional)
Take out a 6-quart crockpot and set aside. In a large skillet, cook your ground beef and drain the fat. Place your ground beef in the crockpot.
Add the onion, parsley, potatoes, chicken broth, flour, Velveeta, milk, salt, pepper and sour cream to the crockpot. Cook on low for 5-6 hours. Soups tend to taste better the longer you cook them, so air on the side of 6 hours if you can.
When you are near ready to serve your soup, if you want to add it, cook five (or more) pieces of bacon in a skillet, oven or microwave (whatever your favorite method). Crumble or cut up your bacon, reserving a little bit to put on top of each bowl of soup.
Place the rest into the crockpot and stir. Garnish with the reserved bacon, some cheese and/or green onions and serve.
