These Easy Sunflower Cupcakes are made with Peeps! A tasty and fun treat that will become your favorite part of baking in the spring.

Easy Peeps Cupcakes

The cold weather is beginning to turn, so let’s start getting the garden ready, even if it’s just in our kitchens. These Easy Sunflower Cupcakes are the perfect flower cupcakes for spring and full of great flavor and texture. 

It’s always fun when Peeps are in season. You can serve a Peeps chick with everyone’s dinner or enlarge Peeps marshmallow chicks in the microwave and watch them shrink. (My kids taught me this a few years ago!) But I’ve always liked the Peep bunnies, which is probably where these altered bunny cupcakes originated. 

There are lots of intricate sunflower designs around, but these sweet treats are meant to be one of the easy recipes that anyone can bake. Using boxed cake mix, yellow petals made from bunny Peeps, bright pink frosting, and crunchy sprinkles, you can have your own sunflower cupcakes in just about an hour. 

These flower cupcakes are the perfect recipe to serve at baby showers, on Mother’s day, or as festive Easter cupcakes. They’re also cute cupcakes to make with the kids or grandkids as an activity. Once you arrange the cake batter and bake them, they’re so much fun to decorate!

Recipe Notes:

  • You can use any color of Peep candy in this easy recipe. Bunnies are the easiest for making petals, but if you find them in another color, you can use them. 
  • If you want to make homemade cupcakes for this recipe you can, but you can also use a box mix.

How To Make Sunflower Cupcakes Recipe

Sunflower Peep Cupcakes Ingredients:

1 Yellow cake box mix (which usually calls for eggs, vegetable oil, and water)
1 tub pink frosting
White nonpareil sprinkles
Yellow Peeps Bunnies (2 packages will make 9-10 cupcakes)

Supplies Needed:

Large mixing bowl
Kitchen spoon or wooden spoon
Cupcake liners
Cupcake tin
Wire cooling rack
Butter knife or pastry bag
Kitchen scissors

Directions:

Step 1: Preheat your oven to 350 degrees and line a cupcake pan with cupcake liners.

Step 2: Prepare your box cake mix according to the box directions (which would typically require eggs, oil, and/or water) with a large bowl and an electric mixer or a wooden spoon.

You can use a piping bag for this, but a butter knife will work fine.

Step 7: Place a single layer of yellow flower petals all the way around the outside edge of each frosted cupcake, leaving a little bit of room between each.

How To Store Leftover Sunflower Peeps Cupcakes

Store any leftover Peep cupcakes in an airtight container on the counter for up to 2 days.

Can I Use Chocolate Cupcakes For These Simple Sunflowers?

Yes! If you need some chocolate flavor in your life, you can choose a chocolate cupcake instead of yellow or vanilla cupcakes.

Any of these varieties will work, just make sure that you are using regular-size muffin cups when baking. I used Betty Crocker for this recipe, but you can choose your favorite brand.

Can I Change The Colors So These Look Like Classic Sunflowers?

Yes! These pretty Sunflower Cupcakes are meant to be whimsical and encourage a fun time, but you can switch up the colors.

Use chocolate or yellow frosting instead of the pink as you frost cupcakes and then choose chocolate sprinkles, crushed mini Oreos, jelly beans, or mini chocolate chips for the center of the cupcake in order to simulate more realistic sunflower seeds. Be sure to keep your yellow petals for the leaf shape.

Yes! While sunflowers are typically associated with summer, this fun treat is made with marshmallow Peeps that are generally available in the spring. That makes them Easter Peeps cupcakes as well as sunflowers!

These are perfect for adding to Easter baskets or serving at your Easter party right along with other Easter desserts (like my No-Bake Rice Krispie Nests).

Total Time 1 hour

Ingredients

  • 1 box yellow cake mix (usually calls for eggs, oil, and water)
  • 1 tub pink frosting
  • White nonpareil sprinkles
  • Yellow bunny Peeps (2 packages will make 9-10 cupcakes)

Instructions

  1. Preheat your oven to 350 degrees and line a cupcake pan with cupcake liners.
  2. Prepare your cake mix per the instructions on the box (usually calls for eggs, oil, and/or water).
  3. Fill each cupcake liner halfway and bake for 15 minutes.
  4. Remove from the oven and allow to cool completely.
  5. Once cooled, frost each cupcake with your pink frosting.
  6. Cut the bunny Peeps ears off and the very bottom of the bunnies, all which will be used as petals.
  7. Start placing the petals all the way around the outside edge of the frosted cupcakes.
  8. Sprinkle your white sprinkles in the center of each flower and enjoy!
